Massa Ticino by Carma: fridge-resistant
This Swiss fondant has a balanced, very light vanilla flavour. It is very elastic and resistant to moisture, especially the Tropic version, and copes well with hot summer days; it is also certified gluten-free, vegan, halal and AZO-free. It comes in 250 g packs in Bride White, Pitch Black, Lovely Red, Sailing Blue and Yellow, as Bride White in 1 kg and as Tropic white in 2.5 kg and 7 kg – ideal for covering cakes, but also for smaller figures.
Funcakes: great for covering cakes
Funcakes fondant usually has a vanilla flavour; varieties such as Marshmallow White or Choco add extra flavour. It is excellent for covering cakes and for flat decorations, less so for small figures; being fairly soft, it rolls out easily, but do not cover a cake taller than about 7 to 10 cm with it. The full selection: Covering FunCakes sugar paste. For themed decorations there are sets of 5 × 100 g: primary colours (white, black, yellow, red, blue), basic colours (black, red, blue, green, yellow), pastel colours (yellow, pink, blue, green, lilac), earthy colours, blue-and-white or pink-and-white kits for a baby shower, and seasonal sets such as Halloween (orange, violet, black, green, white).
Ready-rolled fondant sheets
The Funcakes fondant sheet is the quickest way to cover a cake. Lightly vanilla-flavoured, it comes in white, black, red, pink, Hot Pink, yellow, light blue, Denim Blue and Spring Green, and as a round ready-rolled marzipan sheet. Instructions in this video (in French).
Renshaw Rollfondant Extra: white, for colouring yourself
Renshaw's Extra fondant comes from England; very elastic and easy to work with, it suits humid climates and keeps best in the fridge. It has a light vanilla flavour, does not stick and is versatile: for decorations, covering cakes up to 10 cm tall and small figures up to 5 cm. We stock it only in white, in 250 g and 1 kg; with gel colours you can easily give it any shade, or cover the cake in white and colour it with an airbrush for a great effect. Pastkolor: great for 3D cakes and modelling
The firm Pastkolor sugar paste from Portugal is excellent to work with; just knead it well before rolling it out. It has a light lemon flavour and comes in 250 g in white, black, red and pink, in 1 kg in twelve colours and as white ready-to-roll fondant in 2.5 kg. Thanks to its firm texture it covers tall cakes and even 3D cakes such as a football without tearing, and it is also better for modelling.
Scrapcooking and marzipan
Scrapcooking fondant comes in 250 g packs in muted shades such as sage, mint, lemon, blush, nude, linen, lilac, denim and sugared almond, as well as white. You will also find coloured marzipan for covering and modelling here.
Frequently asked questions about fondant
Which fondant copes best with the fridge?
Massa Ticino, especially Tropic: the covered cake can stay in its cake box in the fridge without sweating. Renshaw Extra also keeps well in the fridge.
How do I make fondant firmer for larger figures?
Knead in CMC/Tylo powder thoroughly so the paste sets faster and becomes firmer: 1 teaspoon or 3 g per 250 g of fondant.
What size cake does a ready-rolled fondant sheet cover?
The sheet is 36 cm in diameter and covers a cake up to 20 cm in diameter and 10 cm tall; for larger cakes, roll it out a little further.
