Gel colorings are perfect for coloring macaron shells, buttercreams, ganaches, fondant, marzipan, or even your sponge cakes and other cakes. Everything except chocolate.

Water-soluble or oil-soluble colorants

Gel food colorings are water-soluble, meaning they are water-based. Therefore, they are not suitable for coloring chocolate. To color chocolate, visit our "Chocolate Colorants" category. These are oil-soluble, meaning they are oil-based.

The advantages of gel colorants

We highly recommend gel colorants. They do not alter the texture of your mixes, unlike liquid colorants, they are very powerful and intense in color and are tasteless. They are clearly our favorite colorants.

You can achieve very pastel shades by using just a drop of coloring, or achieve intense colors. We suggest using a toothpick to better gauge the amount of colorant you wish to add.

These colorants hold up very well during baking. You can therefore make rainbow cakes, colored rolls, or biscuits in various colors.

There are many brands of colorants on the market, such as Funcakes, Wilton, Progel, and Scrapcooking. The best brand for us is Progel. These provide intense colors, even for red and black, which are very complex colors to achieve.

A wide choice of colors is available on our website, basic colors like red, yellow, orange, green, or blue, as well as turquoise, violet, lime green, caramel, etc.

Painting with gel colorants

You can also use gel colorants to paint with a brush on fondant or marzipan. Simply dilute your colorant with a bit of alcohol and paint. :o) Here is an example (recipe in french), "Dinosaur Cake" using powder colorants. The process is the same with gel colorants.
