Angled or straight palette knife?
On an angled palette knife the blade is offset. Your hand stays above the surface, so you can spread cream on a cake or a mixture in a tray flat and evenly. Small angled palette knives are ideal for cupcakes, tartlets and fine decorations, large and maxi models for cake tops and sponge sheets. With the straight palette knife you smooth the sides of a cake, spread icing and lift cake layers or whole cakes safely.
Tabling chocolate on marble
Tabling means tempering chocolate by hand on a cool stone surface:
- Melt the chocolate completely.
- Pour about two thirds onto the marble slab and keep it moving with the palette knife and metal scraper until it thickens slightly.
- Return it to the remaining warm chocolate and stir until it reaches working temperature.
The exact temperatures depend on the type of chocolate and are given on the couverture packaging. You can then use the angled palette knife to spread chocolate thinly on a sheet, for example for decorative panels.
