As for the tonka bean, originally from South America, it reveals subtle notes of vanilla, caramel and almond. It goes beautifully with vanilla and fruit compotes, and enhances the flavour of chocolate. We used it to make a flavoured caramel and to add an intense touch to our chocolate-tonka mini logs. A precious spice that will elevate your most indulgent creations with just a few grams.
