Silicone entremet moulds
There are 53 products.
A silicone entremet mould turns a layered mousse cake with sponge, insert and glossy glaze into a dessert worthy of a patisserie window. The cake takes its modern shape straight from the mould: ring, cushion, wave, spiral, dome or fine relief. In this category you will find silicone moulds for whole entremets, round models in several sizes, for example Ø 14, 16, 18 or 20 cm, heart shapes and rectangular moulds up to 33 x 22 cm for large gatherings.

How to make an entremet
- Prepare the insert (fruit jelly, crémeux or praline) and freeze it. Suitable moulds are in the Silicone insert mould section.
- Fill the mould with mousse, press in the frozen insert and finish with sponge or a crunchy base.
- Freeze through, unmould onto a rack and coat with Mirror glaze or velvet spray.
- Place the glazed entremet on a base from the Cake circles & entremet bases category so it can be served and transported neatly.
What to look for when buying
Diameter, height and surface make the difference. Shallow moulds such as the round silicone cake moulds 3.2 cm high are ideal for sponge layers and inserts, while taller models hold mousse and insert together. For exact portions, choose Maggie with its pre-marked slices. Ti Amo in a heart shape comes with a cutter for trimming the insert or biscuit base to size. The almond mould creates a round disc with a raised almond pattern that can sit on cakes, loaf cakes or ice cream as a topping. For weddings, company events or birthdays with lots of guests, the rectangular moulds are ideal. With highly textured moulds such as Basket, Coral or Twister, a fairly runny mousse fills every groove more easily.
Frequently asked questions
Which entremet size serves how many people?
A Ø 16 cm mould serves about 6 people, Ø 18 cm serves 8 and Ø 20 cm serves 10 to 12. The rectangular moulds are meant for even larger groups.
Why must the entremet be frozen before unmoulding?
Only when frozen through does it release cleanly from the silicone mould, the relief stays sharp and the mirror glaze coats it evenly.
Can I also bake a cake in an entremet mould?
Yes, many models go in both the oven and the freezer. Moulds labelled as silicone baking moulds, such as Galaxy, Rocky, Mars or Futura, work for cakes and small bakes as well as for mousse and frozen desserts.
Simple round moulds without relief are in the Round silicone mould category, perfect for making your first entremets with confidence.
