Baking and Filling a Fondant Cake

To make a fondant cake, first bake a sponge cake (click here for our sponge cake recipe in French). For this, the high cake pans of different sizes or the adjustable pastry ring, very practical, are perfect. And with the food release spray, your sponge will come out of the mold without a problem ;o)

An adjustable cake leveler is very handy for cutting the cake evenly.

Place the cake on a thick board and a turntable. The turntable is essential for us in Cake Design, it greatly facilitates filling, frosting, and covering the cake.

To fill the cake, it is advisable to work with a disposable piping bag, a steel angled spatula, or a stainless steel spatula.

Once the cake is filled, cover it with buttercream or ganache (the best base for fondant). For a smooth finish, we recommend using a cake smoother to achieve straight edges.

Pro tip: if you're planning a multi-tiered wedding cake, it's important to support each layer with cake supports and a thin board to prevent collapse. And if the couple wants a giant cake but doesn't have enough guests for the size desired, we recommend making some tiers with polystyrene bases. After decorating, no guest will notice that part of the cake is not edible ;o)

 

Covering the Cake

Cover the cake with fondant (you can buy it pre-colored or make it yourself with gel colorant) by rolling it out with a rolling pin and some magic powder for rolling out.

Once the cake is covered, you can move on to the final phase, which is decorating your cake ;o)

 

Decoration

Depending on the final look you want to achieve, there are various tools to make the job easier. We have many edible decorations ready to use such as sugar pearls, flowers, gold leaves, ... The candles and toppers also give an elegant look to the cake.

The modeling tools are perfect for shaping and sugar flowers, as well as for general detail finishing. To succeed in your modeling and sugar flowers, use special flower modeling paste.

We have almost every theme covered with our cookie cutters, molds, mats, and decorations.

For experienced bakers who want to try different decorations, working with an airbrush is recommended. Whether freehand or with stencils, the airbrush allows for cool effects.

Caution! Also use colorants for the device. The airbrushes we present in this category are designed for Cake Design, not for chocolates and pralines.
