Fat-soluble powder colour tints chocolate, white couverture and cocoa butter intensely – without water, so your chocolate won’t seize. The small 5 g powders go a long way and suit hobby chocolatiers, while Mona Lisa powders in 100 g cover larger batches. Tip: dissolve the powder in a little melted cocoa butter first, then stir it into the chocolate.
