The right size for entremets
For an entremet, choose a circle the size of the ring or 1 to 2 cm smaller, so that it fits inside the ring and is not visible after glazing. For a cake built in a Ø 20 cm ring, a Ø 18 or 20 cm circle is ideal. If the cake is to be presented on a visible board, you will find larger, sturdier boards in Round cake boards. The gold and black bases, on the other hand, are designed to be the same size as the cake and look elegant in a display counter or a window box. What is the difference between a cake circle and a cake board?
A cake circle is about 1 mm thin and sits directly under the cake. A cake board is 2 to 12 mm thick and usually larger than the cake.
Which pack size is best?
For frequent use, for example in a patisserie, the packs of 50 are good value, in white or gold/black. For a few cakes, 5 or 10 are enough.
