Casting with a stick
Polish the mould with cotton wool before casting so the lollipops have a beautiful shine. Fill the cavities with tempered couverture and tap the mould lightly to release any air bubbles. Lay the lollipop sticks in the grooves provided, twist them so they are fully coated, then cover them with a little more chocolate. After chilling, the lollipops come out cleanly. Care and tips
Wash the moulds by hand in lukewarm water, without abrasive cleaners and never in the dishwasher. White chocolate and coloured cocoa butter add cheerful splashes of colour.
