Many people are afraid to make macarons because they think it's too complicated. Don't panic — we give you all the tips you need to make your macarons like a pro.
First, you need to choose between Italian or French meringue. Personally, I prefer the French one, which is simpler to make. For the eggs, the laying date is very important. Opt for eggs that are 10 days old, but no more than two weeks. We recommend using extra fine almond powder to get smooth shells. Choosing the right colouring is an important step. Don't use just any colouring. Go for gel colourings — they're our favourites. You can then pipe your macarons onto baking paper placed on a perforated tray and you're all set.
