What is a mirror glaze?
Mirror glaze is an ultra-shiny coating used on entremets to give them a smooth and elegant finish. Its mirror effect enhances creations and adds a professional touch to your desserts.
It is made of chocolate, sugar syrup, glucose and water. Sweetened condensed milk, gelatine, and sometimes food colouring are also added to give it personalised shades.

Powdered Gelatine
To ensure your mirror glaze holds, we recommend using powdered gelatine. It provides a more homogeneous and less gelatinous texture than sheet gelatine. It is available in beef, pork or fish-based versions. Whichever you choose, the quantity and usage remain the same.
You can nevertheless use sheet gelatine. To respect the proportions, simply base it on the total weight: in Switzerland, each sheet of gelatine weighs approximately 1.66 g.
