What are velvet sprays?
Velvet spray is a mixture of chocolate and cocoa butter. It is ideal for decorating entremets and comes in many different colours. How is the velvet effect created? It's simple — it's the thermal shock between a frozen surface and the fat in the cocoa butter.
What can velvet sprays be used on?
Velvet sprays should generally be used on a frozen base such as a mousse, bavarian cream, génoise, biscuit or any other frozen entremet.
Preparation
Freezing
First, remember to freeze your dessert the night before. The ideal freezing temperature is -18°C. If the temperature drops below -18°C, take your entremet out a few minutes beforehand and let it temper briefly at room temperature.
Protection
Once sprayed, cocoa butter and chocolate are very difficult to clean. It is therefore best to protect your workspace thoroughly before using the sprays. There is a particularly handy technique to avoid getting your entire kitchen dirty.
Use a box with high sides as shown in the photo. This will allow you to spray directly inside the box and protect your kitchen.
Don't forget to place your entremet on a sheet of baking paper on a turntable — this will make it easier to achieve an even texture on all sides.

The spray
For the spray contents to have an optimal consistency, it is important that it is at the right temperature. It is recommended to submerge the spray in lukewarm water (25-35°C) before use to liquefy the contents.
Additionally, it is very important to shake the velvet spray well before each use.
How to proceed
1) Prepare your workspace properly — the spray is very volatile and difficult to clean.
2) Shake your spray to mix the contents.
3) It is essential to keep a minimum distance of 15-20 cm to create a beautiful, even texture across your entire entremet. If you get too close, the velvet layer will be thicker and less attractive.
4) You can mix colours for an even more incredible effect.
5) Don't forget to clean the small spray nozzle with very hot water to prevent it from clogging.
6) You must let your entremet rest for a while before serving. Follow the product instructions, as the time may vary depending on the brand. (For Silikomart sprays, wait at least 1h, and for Funcakes sprays, 4h.)
7) Once sprayed, it is also possible to put your preparation back in the freezer.
Contents
Silikomart sprays contain 250ml. With 1 bottle you can cover 4 yule logs.
Funcakes sprays contain 100ml. With 1 bottle you can cover 1 to 2 yule logs.
Storage
Velvet sprays must be stored away from heat sources and kept away from flames and sparks. Do not expose to sunlight or store at temperatures above 50°C.
Warnings
For professional use only. Velvet spray is an extremely flammable product and may burst when exposed to heat.
