Unicorn number cake
Hello foodies!
I have a very girly and trendy cake for you. ;-)
A number cake! I love making these cakes, because you can vary the flavours and decorations according to the theme and age. :-)
For this recipe, I chose, from our Number Cake supplies, the number "5" with raspberry and chocolate flavours.
To complement your birthday cake, create a beautiful decoration using our various items in our Unicorn birthday category.

For a number cake digit 5 in A4 size for approximately 8 people, you will need:
Raspberry whipped ganache
- 220gr of full cream
- 70gr of raspberry purée
- 60gr of white chocolate
- 1/2 sheet of gelatine
Milk chocolate whipped ganache
- 266gr of full cream
- 120gr of milk chocolate
- 1/2 sheet of gelatine
Sponge cake
- 6 eggs
- 150gr of sugar
- 105gr of flour
- 45gr of cornstarch
I recommend making both whipped ganaches the day before, as they will need to rest at least 6 hours in the fridge.
Raspberry whipped ganache
Start by soaking 1/2 sheet of gelatine in a jug of cold water.
Set aside while you prepare the rest.
In a saucepan, pour 220gr of full cream and bring it to the boil.
Once the cream is boiling, remove the saucepan from the heat.
Squeeze out the gelatine, place it in the hot cream and mix well until it melts into the cream.

Pour the cream/gelatine mixture in 3 additions over the 60gr of white chocolate, mixing well with a whisk between each addition to obtain a beautiful ganache.

Add 70gr of raspberry purée to the ganache.
The remaining purée will keep for 2 to 3 days in the fridge, but you can also freeze it in portions for your future creations.
Mix everything together well.
To obtain a smooth ganache, blend it for a few seconds using a hand blender.
Cover it with cling film directly on the surface, meaning the cling film is touching the ganache.
Place it in the fridge for at least 6 hours.
We will now prepare the second ganache.
Milk chocolate whipped ganache
As with the raspberry ganache, we will start by soaking 1/2 sheet of gelatine in a jug of cold water.
Pour 266gr of full cream into a saucepan and bring it to the boil.
Once the cream is boiling, remove it from the heat.
Squeeze the gelatine well and place it in the hot cream. Mix with a whisk.
As with the raspberry ganache, pour the cream/gelatine mixture in 3 additions over the 120gr of milk chocolate.
Mix well between each addition to obtain a beautiful ganache.
Using a hand blender, blend for a few seconds to get a smooth ganache.
Cover the ganache with cling film directly on the surface to prevent a skin from forming.
Place the ganache in the fridge for at least 6 hours.
The ganaches are chilling so we will move on to the sponge cake.
Sponge cake
To save time and make things easier, I recommend using 2 silicone mats.
Start by cracking 6 eggs into a large bowl.
Add 150gr of sugar, then using a whisk, beat everything at maximum speed for about 15 minutes.
Meanwhile, mix 105gr of flour with 45gr of cornstarch in a bowl.
After 15 minutes, the eggs and sugar have risen well and become nice and fluffy.
Preheat the oven to 180°C, fan-assisted.
Into the whipped egg/sugar mixture, sift the flour/cornstarch mixture.
Fold gently with a spatula so the eggs don't deflate.
For this recipe, I used 2 silicone sponge mats, as mentioned above, as this will make the preparation easier and save you time.
Place each silicone mat on a perforated baking tray and grease them with a release spray.
Spread the sponge batter over the 2 silicone mats.
Using a large offset spatula, spread the batter evenly so it fills the entire mat flush to the edges.
Place each tray in the middle of the oven preheated to 180°C for 8 to 10 minutes.
Our sponge cakes are baked. Remove them from the oven, then immediately turn them out onto baking paper.
After a few minutes, carefully remove the silicone mat.
Let them cool completely at room temperature.
I used the number cake templates from Scrapcooking. They are great because they are laminated, washable and therefore reusable.
For this recipe, I chose to make the number 5, as it is more or less the standard size for all digits.
Using a serrated knife, cut out the number 5 from each sponge cake.
You will have some leftover sponge, but it will keep well wrapped for 2 to 3 days… and will be quickly nibbled! ;-)
You can also freeze it and use it as a base in entremet cakes or in small dessert glasses.
If you make your sponge the day before, wrap it well in cling film. ;-)
The ganaches are nice and cold so we can move on to assembling.
Assembly
We will start by whipping the chocolate ganache.
In a large bowl, pour the ganache and, using a whisk, whip it for a few minutes at medium speed. This will depend on your mixer and the temperature of the ganache.
It should have a lovely light texture and hold its shape well.
Be careful not to over-whip it, otherwise it will split and be ruined. :-(
Once the ganache is ready, we will move on to assembling the 1st layer.
Pour the ganache into a large piping bag fitted with a 12 mm round nozzle.
Use a jug to fill the piping bag neatly.
Place the first sponge on an A4-sized board.
Start piping small, even ganache peaks.
Hold your piping bag straight up to get nice peaks.
Personally, I always start by doing the outside and then the inside.
Set aside in the fridge while you prepare the second ganache.
We will now whip the second ganache, the raspberry one.
In a large bowl, pour the ganache and, using a whisk, whip it for a few minutes at medium speed. This will depend on your mixer and the temperature of the ganache.
As with the chocolate ganache, we want to achieve a light texture and a ganache that holds its shape well.
Be careful not to let it split either.
Place it in a piping bag fitted with a 12 mm round nozzle.
Use a jug to avoid making a mess and pour the ganache inside the bag.

We will now pipe the raspberry ganache.
First, place the second sponge on top of the chocolate ganache.
Pipe neat little even peaks. As with the chocolate ganache, I started by going around the edge, then filled in the inside.
Now that our number cake is assembled, we will move on to my favourite step, the decoration! ;-P
Decoration
Decorate your number cake according to the chosen theme and age. You will find plenty of theme ideas and lovely decorations in our birthday category! :-)
For this number cake, I went with a unicorn decoration, super girly! :-)
To start, place the horn and ears from the unicorn kit.
I always keep a few macaron shells in a small box in the freezer to decorate my number cakes.
We will need 5 macarons. Fill them with the leftover raspberry ganache.

We also made some homemade mini meringues, here is the recipe: Mini meringues.
For an even girlier effect, go for these pretty wafer paper pompons. ;-)
There you go! Enjoy the decoration and let your imagination run wild! Place a macaron, a pompon, then the meringues and so on until you are happy with the result.
Our number cake is finished. Place it in the fridge until ready to serve.
I recommend putting it in a box to avoid any accidents in the fridge. :-)
You can make it a day in advance, but I recommend adding the decorations on the day so they don't absorb moisture.
Depending on the number you make, you may have some leftover ganache and sponge that you can use, for example, in small dessert glasses or mini entremet cakes.
Set a lovely unicorn-themed table. You will find everything you need in the unicorn category.

By: Karin On 2025-06-12Afin de bien réussir une génoise, il est important de bien mélanger vos œufs afin que ceux-ci montent ;-) Cela est un premier point, puis ensuite bien mélanger la farine délicatement. Il est difficile à dire ce qu'il n'a pas fonctionné lors de votre préparation mais généralement c'est le montage des œufs le problème ;-) Belle journée et bonne pâtisserie :-)

Je souhaite réaliser deux number cake de format A4 pour fêter les 60 ans et 30 ans de deux connaissances. Le premier sera avec une ganache montée framboise et génoise au chocolat. Le second, je souhaite le réaliser avec une ganache montée mangue et génoise arôme vanille . J'ai acheté sur votre site les purées de fruits ainsi que les gabarits. Je souhaite savoir si je peux me baser sur les quantités mentionnées en les multipliant par 4 ? Dans l'attente de votre retour, je vous souhaite une excellente journée !

Pour l'enlever du papier sulfurisé après, c'était impossible, elle était toute collée et c'est mal enlevée. Après, pour la couper aussi, impossible de faire quelque chose de net. J'ai aussi l'impression qu'elle était bien moins épaisse que la vôtre, malgré qu'elle était bien aérée et gonflée avant cuisson. Est-ce que j'aurais dû la laisser plus longtemps au four ? Merci :-)

By: Karin On 2024-07-01Avez-vous bien sprayé votre moule avec le spray de démoulage? C'est un point important afin que votre génoise ne colle pas. Nous utilisons souvent ce spray et nous n'avons jamais rencontré de problème de démoulage, il est magique :-) Belle journée et bonne pâtisserie ;-)

By: Florence H. On 2024-01-26Bonjour, j'ai fait cette recette et aussi le Number Cake Sapin. C'est vraiment délicieux mais j'avais une question. Dans les deux cas, la ganache framboise (ou crémeux mangue pour le sapin) était un peu liquide. Et dans les deux cas, celle au chocolat était trop dure, et même avec le robot,je n'ai pas réussi à la mélanger. J'ai finalement tout bien peu décorer. J'ai mis la ganache plus liquide au centre et celle au chocolat dans les bords mais je me demande pourquoi j'ai ce problème.
J'utilise du chocolat Cailler blanc ou noir 70-80%.
