Tonka-chocolate mini log cakes
Hello food lovers!
The festive season is just around the corner :-)
This year I'm sharing a recipe for ultra indulgent individual desserts.
Chocolate mousse mini log cakes with a tonka bean insert, hazelnut sponge and a cocoa mirror glaze.
Here is the ingredient list for 8 mini log cakes:
Tonka bean insert
- 1 gelatin sheet
- 107gr whole cream
- 42gr milk
- 1gr natural tonka bean flavour powder
- 20gr egg yolk
- 10gr sugar
Hazelnut sponge
- 123gr hazelnut powder
- 30gr flour
- 3 eggs
- 123gr icing sugar
- 21gr butter
- 90gr egg whites
- 30gr sugar
- 150gr whole hazelnuts
Chocolate mousse
- 2 gelatin sheets
- 120gr milk
- 175gr milk chocolate
- 2gr natural tonka bean flavour powder
- 230gr whole cream
Cocoa glaze
- 180gr water
- 150gr cream
- 330gr sugar
- 120gr unsweetened cocoa powder
- 14gr powdered gelatin
- 70gr water
- Gold glitter
Decorations
- Caramelized hazelnuts
- 1 "Buchettes 140 Silikomart" mould
- 1 "My Snack Silikomart" mould
- 1 adjustable frame
Insert
We'll start by making the tonka bean insert.
For 4 cavities of the "My Snack" mould.
Place 1 gelatin sheet in a jug of cold water to soften the gelatin.
Mix in a bowl 20gr of egg yolk and 10gr of sugar.
Add 1gr of natural tonka bean flavour powder to the egg yolk and sugar mixture.
For accuracy I use the precision spoon scale.
Mix well with a whisk.
In a saucepan, bring 107gr of whole cream and 42gr of milk to a boil.
Once the mixture reaches a boil, pour it over the egg yolks, sugar and tonka bean while stirring continuously.
Pour your mixture back into the saucepan and cook it to 82°C, stirring well.
I use the thermometer whisk, it's brilliant – you can set the desired temperature and it will beep once it's reached.
Transfer your mixture into a bowl.
Squeeze out the gelatin and add it to your preparation, mix well.
Place your "My Snack" mould on a perforated baking tray.
Pour your preparation into 4 cavities of the "My Snack" mould.
Place in the freezer for at least 3h.
Hazelnut sponge
For an adjustable frame set to 30cm x 20cm.
Preheat your oven to 180°C fan-forced.
In the mixer bowl, whisk 3 eggs and 123gr of icing sugar until pale and fluffy.
Once your mixture is pale and nicely airy, add 123gr of hazelnut powder and 30gr of flour.
Mix for 30 seconds at speed 2.
Melt 21gr of butter in the microwave, add it to the preparation.
Mix again for 30 seconds at speed 2.
Whip 90gr of egg whites with 30gr of sugar into stiff peaks.
Gently fold them into the previous mixture using a spatula.
Place 150gr of whole hazelnuts in a bag and crush them coarsely with a large rolling pin.
Place on a perforated baking tray a silicone mat and an adjustable frame set to 30cm x 20cm.
Pour the preparation into the frame.
Sprinkle the crushed hazelnuts over your batter.
Bake for 12 minutes at 180°C fan-forced.
Once your sponge is cold, turn it out onto a cutting board.
Cut out 8 rectangles of 6cm x 4cm.
You'll have a little sponge left over – you can either freeze it for future use or eat it as is.
Chocolate mousse
Place 2 gelatin sheets in a jug of very cold water.
Heat 175gr of milk chocolate in the microwave at 600watt for 30 seconds.
After 30 seconds stir with a spoon and return to the microwave for 30 seconds.
Bring 120gr of milk and 2gr of natural tonka bean flavour to a boil. For accuracy I use the precision spoon scale to weigh the tonka.

Once the milk is boiling, squeeze out the gelatin and mix it into the milk.
Pour the milk in 3 additions over the melted chocolate, mixing well each time.
Allow your mixture to cool to approximately 27°C.
Meanwhile, whip 230gr of whole cream into whipped cream using a stand mixer.

Once the chocolate and milk mixture reaches approximately 27°C, add the whipped cream and fold in gently.

Pour your mousse into a piping bag.
Assembly
Remove the inserts from the freezer and unmould them. Place them on a cutting board.
Cut them in 2, giving you 8 inserts.

Place the "Buchettes 140" mould on a perforated baking tray.
Fill the moulds halfway with chocolate mousse.
Place the insert and gently tap your tray.
Place the sponge (hazelnuts facing the mousse) pressing down so the mousse rises up into the edges.
Smooth with a small offset spatula.
Place your mini log cakes in the freezer for at least 12h.
(You can prepare these mini log cakes up to 3 weeks in advance and keep them in the freezer).
Cocoa mirror glaze
On the day of serving, you can glaze your mini log cakes, here's how:
In 70gr of cold water, weigh out 14gr of powdered gelatin and mix well.
Let it bloom while you prepare the rest.
In a saucepan, bring 180gr of water, 150gr of cream and 330gr of sugar to a boil.
Once the mixture reaches a boil, remove from the heat and add 120gr of cocoa powder, whisk together.
Add the gelatin to your preparation.
Pour everything into a jug.
For an even shinier finish, add a knife tip of gold glitter.
Using a Bamix as shown in photo no. 1, blend the glaze to remove any air bubbles.
Allow your glaze to cool to approximately 30°C before using it.
If your glaze is too cold you can reheat it in the microwave. You can even make it the day before and leave it to cool in the fridge, then reheat it in the microwave to 30°C and blend it to remove air bubbles.
The cocoa glaze can be frozen as is. But be careful – you cannot freeze an already glazed mini log cake, the glaze will blister.
Prepare a cake board with cling film on top. Place a wire rack on top.
This will allow you to catch the excess glaze without making a mess ;-)
Unmould your mini log cakes and place them on the wire rack.
Using the jug, pour the cocoa glaze over your frozen mini log cakes – the glaze will set on contact.
Make sure it covers everywhere evenly.
Tap your wire rack to remove the excess glaze from the mini log cakes.
Use a small offset spatula to move your mini log cakes.
For the decoration we'll keep it simple – just a few caramelized hazelnuts arranged in a line on top of the mini log cakes.
Leave them to thaw for 4 hours in the fridge before serving.

Un vrai régale cette recette. Par contre pour changer un peu, j’ai utiliser du chocolat tobloronne pour la mousse ;)
Un vrai délice.
J’avais juste peur de me tromper dans les feuilles de gélatine pour la mousse, car c’est indiqué 2 et il y en a 3 sur la photo… mais j’ai mis que 2 et c’était top!

By: Tanya S. On 2022-12-06Bonjour, Cette recette me tente bien pour ces fêtes de fin d'année. Quelque chose de différent. Par contre, mon homme étant allergique à la noisettes je recherche donc avec quoi je pourrais remplacer le biscuits. Es qu'un biscuits aux amandes irait ? Ou autre conseil ?

Pour la recette de la mousse, vous pouvez faire chaque ingrédient x 1,2. Concernant l'insert, vous pouvez faire chaque ingrédient x3. Si vous ne souhaitez pas faire vous-même le glaçage, vous pouvez soit le remplacer par un spray velours ou alors utiliser un glaçage miroir déjà prêt.

Tout d'abord merci pour cette belle recette j'ai trop hâte de la faire ... par contre j'ai une question vous mettez les bûchettes 12 au congélateur et après le glaçage elles retournent au congélateur...donc c'est une buche
