With chocolate combs and decorating spatulas you can turn tempered chocolate into stripes, waves, curls, leaves and feathers, just like the cakes and desserts in a patisserie. The range includes chocolate combs 1 and 2 (fine), 3 and 4 (medium and large) and 5 and 6 (short and long spacing), the tree bark pattern comb, comb scraper sets with wavy, straight and serrated edges, the 3-in-1 wave decorating scraper, a 5-piece decorating spatula set, a rigid metal horn and chocolate spatulas in leaf, feather and narrow leaf shapes.
The numbers on the combs stand for different line widths and spacings. With the wave scraper or the serrated edges, you can also draw patterns directly into buttercream or ganache on the side of a cake.
The tree bark comb creates the typical bark texture in the cream of a Bûche de Noël or yule log. For leaves and feathers, dip the tip of a chocolate spatula into tempered chocolate, place it on a sheet and pull it away with gentle pressure. With the metal horn you scrape set chocolate into curls and fans.
Usually the chocolate was not properly tempered or the layer was too thin. Check the temperature with a thermometer.
