Homemade Pitch
Hello food lovers!
This week I'm sharing my homemade Pitch, a recipe that kids and adults will love ;o)
For this recipe, I used Michalak's brioche recipe. It's really great :-)
To make 12 Pitch, you will need:
Brioche
- 140g of milk
- 11g of fresh yeast
- 200g of flour
- 32g of sugar
- 2.6g of salt
- 37g of rapeseed oil
- 12 chocolate sticks
- 1 kit "airplus 03 Plumcake"
- 1 egg yolk
Place 140g of milk in a bowl and heat it in the microwave at 600 watts for 30 seconds. Set aside at room temperature.
Mix 200g of flour and 32g of sugar in a large bowl.
Then add 11g of crumbled yeast.
Add 140g of milk and 37g of rapeseed oil to your mixer bowl.
Knead your dough for 2 minutes at speed 1, then add 2.6g of salt. To be precise, I use our scale spoon.
Never let the yeast and salt come into contact. Salt cancels out the properties of the yeast and prevents it from activating.
Once the salt is added, continue kneading for another 3 minutes at speed 1.
Knead again for 5 minutes at speed 2 to activate the gluten and give your dough elasticity.
Once your dough is kneaded, shape it into a ball.
Cover it with a damp cloth and let it rise for 30 minutes at room temperature.
After 30 minutes, knock back the dough, giving it 3-4 punches.
You can either let it rise at room temperature for 1h30, or place it in the fridge overnight and it will rise gently.
Now that your dough has risen well, it's time to shape it.
Place your dough on a lightly floured work surface. Flatten it slightly without overworking it.
Weigh out small portions of dough of about 35g.
Using a large rolling pin, shape into rectangles of 10x8cm.
Place 1 chocolate stick on the wider part of your rectangle.
Fold the sides of your dough over to enclose the chocolate.
Roll your dough around the chocolate stick.
Then place them in an "airplus 03 Plumcake" mould (the kit contains 2 moulds with 6 cavities each).
Place your moulds on a perforated baking tray.
Once your 12 Pitch are shaped, cover them with a damp cloth and let them rise for 1h at room temperature.
After 1h, your Pitch will have risen nicely.
Preheat your oven to 160°C fan-assisted.
Glaze your Pitch with egg yolk using a pastry brush.
Bake your Pitch for 20 minutes.
After 20 minutes your little brioches will be nicely golden.
Once your Pitch have cooled, remove them from the moulds.
Now the hardest part is not eating them all at once :-)
You can freeze them once baked and cooled in freezer bags or in an airtight container.

Il nous est difficile de comprendre ce qu'il s'est passé.
Deux de nos collègues font cette recette de brioche chaque semaine, elle fonctionne super bien. :-)
Avez-vous bien respecté tous les ingrédients et toutes les étapes ?

Est-il possible de faire la recette mais avec des pépites de chocolat à la place de la barre de chocolat ? Si oui, je peux mettre les pépites au même moment que la barre et mélanger délicatement ? Merci d'avance pour cette info, je me réjouis de tester :-)
