Creating new recipes from the basics
These recipes serve as building blocks for countless preparations. You can vary them by adding flavourings or extra ingredients to suit your taste. Planning a birthday cake? Start with our Sponge Cake or the Chocolate sponge cake base, fill and cover it with Swiss Meringue Buttercream or Vanilla whipped ganache, and add a layer of Salted Butter Caramel for extra indulgence. A Mirror glaze gives entremets a flawless, shiny finish.
Caramel is a basic worth mastering as well: our guide to Dry Caramel explains the technique, and with homemade Praline or Chocolate Spread you can flavour creams, fillings and macarons.
Delicious tartlets and more
Tartlets are delightful individual pastries that can be filled with many flavours. Use our Shortcrust pastry or a buttery Sablé breton for the base – the recipes include plenty of tips for a neat result. Once baked, fill them with one of these:
- Pastry cream or Diplomat cream
- Passion fruit curd for a fruity tang
- Orange Cremeux for a fresh, creamy filling
Our Choux Pastry and Reverse Puff Pastry recipes open the door to classic French patisserie, while Mini meringues are perfect for decorating. And for festive baking, our guide to decorating christmas cookies shows you how to finish your biscuits beautifully.
Tip: work precisely and weigh every ingredient. Basic recipes are only reliable when the proportions are respected.
