Passion fruit curd
Hello food lovers!
Here is our recipe for the delicious passion fruit curd.
It can be used in many ways, whether for a tart (like our meringue tart), to fill cakes/cupcakes or why not in a plain yogurt. :o)

For this recipe, you will need:
- 1 gelatin sheet
- 3 eggs (90gr egg whites and 60gr egg yolks)
- 145gr sugar
- 116 g passion fruit purée (available in 500 g and 1 kg packs)
- 175gr butter
This quantity is enough to fill a tart mold of 25 cm in diameter and 2 cm in height.
Let's get started with the recipe!
To begin, take a pitcher of very cold water and place 1 gelatin sheet in it. Let it soften for 10 minutes.

Then pour 145-150gr of eggs (3 eggs) into a saucepan with 145gr of sugar.
Add 116gr of passion fruit puree and mix with a whisk.

Then heat the mixture until it reaches 85°C. Whisk continuously so nothing burns at the bottom of the saucepan.
For this recipe, I used the whisk with the built-in thermometer, it's great! Set the temperature to 85°C, it will beep once it is reached.
Once the preparation reaches 85°C, remove the saucepan from the heat immediately and continue mixing for a few seconds.
Squeeze out the gelatin sheet and add it to the mixture, then mix again with the whisk.

Let the mixture cool down to 60°C.
Once the mixture is at 60°C, add 175gr of butter all at once and gently mix with a whisk.
Then, blend for 1 to 2 minutes until the mixture is smooth and homogeneous.

The passion fruit spread is ready! :o) You can transfer it into a container or use it directly for a delicious pastry! :o)
It keeps for 3 days in the fridge in a well-sealed container.
