Mirror glaze
Hello food lovers!
It has been highly requested and I have been wanting to offer you this tutorial for a long time!
Here is the recipe for the famous mirror glaze in pictures! :o)
First of all, you should know that a mirror glaze can only be used on a frozen dessert.
It will not work on a cold or room temperature dessert.
It is the shock between the frozen entremet and the mirror glaze at 30°C that will allow the glaze to set. :o)
Here is the list of required ingredients, available in our "Miroir-Velours" section:
- 50gr of water
- 10gr of powdered gelatin
- 150gr of white couverture chocolate
- Burgundy gel food colouring
- Shimmering glitter "Ruby"
- 75gr of water
- 150gr of sugar
- 150gr of glucose
- 100gr of sweetened condensed milk
For the mirror glaze, you absolutely need a thermometer! It is essential!
And to get a much less gelatinous and more homogeneous texture, I strongly recommend using powdered gelatin rather than sheets!
So to start, pour 50gr of cold water into a bowl.
Then weigh 10gr of powdered gelatin using the scale spoon.
Personally, I always use fish gelatin or bovine gelatin as it gives an amazing result!
Pour the gelatin into the cold water and mix lightly with a spoon.
Let the gelatin bloom for about 10 minutes.
In a tall jug, pour 150gr of white couverture chocolate and add gel colouring and glitter.
Here, I used the burgundy gel colouring and the shimmering glitter "Ruby" to add some bling to my glaze.
You can of course choose a different colouring colour if you wish, but only use gel or powder colourings.
The glitter is not mandatory. I just add it to make a more intense colour. :o)
In a saucepan, pour 150gr of sugar, 150gr of glucose and 75gr of water.

Mix lightly with a spatula. Then heat the mixture to 103°C.
Once the right temperature is reached, remove from heat immediately.
Pour the gelatin over the chocolate, then pour your sugar syrup over the chocolate.
Let the chocolate melt for a few seconds and mix with a spatula. A beautiful burgundy colour will appear.
Finally add 100gr of sweetened condensed milk and mix again.
Only sweetened condensed milk works. The unsweetened version is too liquid.
To blend your glaze, there are several parameters to follow:
- Use a tall pot or jug
- Use an open or semi-open blender towards the blade. The Bamix being the absolute best! Closed blenders will create a lot of bubbles in your glaze.
- Do not move the blender up and down while blending.
Blend your glaze for 1 to 2 minutes. It is important to blend it long enough for the texture to be perfect.
With a Bamix, you will barely see any bubbles appear.
Once well blended, cover your glaze with cling film directly on the surface and let it cool to approximately 30-32°C.
Let it cool down at room temperature. No fridge! Depending on the temperature in your home, the glaze will take between 30 minutes and 60 minutes to reach the right temperature.
Once the temperature of 30-32°C is reached, blend your glaze again for 20-30 seconds to give it some flexibility.
And there you go! It is ready to use between 29 and 32°C maximum.
To glaze small entremets, you will need a cooling rack and a drip tray.
I found this drip tray at Aligro just so you know.
Unmould your entremets and place them on your rack with the tray underneath.
Then glaze your entremets being very very careful to apply glaze everywhere! Do not hesitate to go over the same spot several times to make sure everything is covered.
Ideally it takes two people so that one glazes and the other points out any spots without glaze. But you can manage alone too. :o)
If your entremet is too large, then place a bowl or a large glass under your entremet and glaze it that way.
Don't forget to still place a drip tray underneath. :o)
Once the glaze has been poured over the entremet, let it finish dripping before moving it.
If you move your entremet too quickly, the glaze will continue to drip onto your tray. Not ideal...
So be patient! Leave it on the rack or bowl for at least 3 minutes.
You can collect the glaze from the tray to reuse it within 7 days. You will need to store it in the fridge and reheat it in a bain-marie to use it again. Don't forget to blend it before using.
To move your entremet without damaging its glaze, I recommend placing one (or two) large offset spatulas under your entremet.
Be careful not to drop your entremet. You need to be patient and very gentle. :o)
So that is how to decorate your entremet with a mirror glaze!
The result is magical!

Merci beaucoup pour votre recette. J'aimerais réaliser ce glaçage mais je souhaite remettre l'entremet au congélateur après le glaçage (j'habite en Guadeloupe et la chaleur ambiante affecte les entremets) pour une meilleure tenue avant de le servir. Est-ce possible s'il vous plaît ?

By: Lydie G. On 2024-12-22Bonjour, j'ai appliqué les quantités de manière précise mais mon glaçage était extrêmement épais à la fin même après avoir mixé (c'était mieux mais pas liquide).
J'avais mis 8g de gélatine de poisson et 2g de gélatine en poudre de la Coop (fin de tiroir :) ).
Est ce que cela peut avoir un impact?
Pour le thermomètre j'ai utilisé celui à tremper dans la préparation et selon les endroits du glaçage c'était plus ou moins chaud mais j'ai attendu 30degrés Max.
D'ailleurs pour le glucose à chauffer avec le thermomètre à mettre dans la préparation j'ai atteint 103° bien 15 secondes avant celui laser. Lequel est le plus précis ? Peut être que le sucre à trop chauffé?
