Vanilla whipped ganache
Hey there, foodies!
Today, I'm going to share a basic recipe that I already showed you for the pumpkin cupcakes.
It's the vanilla whipped ganache! :o)
What is the difference between a regular ganache and a whipped ganache?
Whipped ganache is a variation of classic ganache (chocolate + heated cream), which is whipped to give it a lighter texture. To help it hold its shape, gelatin is added and the chocolate/cream ratio is not the same as for classic ganache.
It is firmer than whipped cream and you can use it to fill cakes, cupcakes, choux, éclairs, macarons and much more! ;o)
I want to mention that this ganache is a recipe by the great pastry chef Philippe Conticini. I love this recipe!

For this recipe, you will need:
- 280gr of heavy cream
- 6 gelatin sheets
- 2 to 3 tsp of vanilla flavoring
- 150gr of white chocolate
- 300gr of heavy cream
Quick note: you can easily use milk chocolate for example, as well as replace part of the cream with juice or fruit purée, as I did for the Rudolph cake recipe. Check out our baking ingredients to make a ganache with the flavoring of your choice.
Vanilla whipped ganache
Soak 6 gelatin sheets in very cold water. The water must really be cold, otherwise the gelatin may dissolve.

In a glass bowl, pour 150gr of white chocolate. I always work with chocolate pistoles made for baking, they are so convenient! I can't stand chocolate bars which (in my opinion) are not of very good quality. Here, I used Callebaut white chocolate. I love it!
Grab a saucepan and pour in 280gr of heavy cream and 2 to 3 tsp of vanilla flavoring.
Bring the vanilla cream to a boil.
Tip: to give your whipped ganache a different flavor, you can replace the vanilla flavoring with a completely different taste in the heated cream: coffee, tonka bean, pistachio are just a few examples. ;o)

Once it comes to a boil, remove the saucepan from the heat, squeeze out the gelatin sheets and add them to the mixture to dissolve them in the cream. 30 seconds will be enough for the sheets to melt.

Once the gelatin sheets are fully melted, pour the vanilla cream over the white chocolate and let the mixture melt for 10-15 seconds. Mix the ganache well with a whisk.

Finally, add 300gr of very cold heavy cream and mix well with a whisk.
Once the ganache is well mixed, cover it with plastic wrap directly touching the surface and refrigerate overnight.
TIP: I never plan far enough ahead to leave my ganache in the fridge overnight... So I cheat! I cooled it in the freezer for about 20 minutes, stirring every 5 to 10 minutes. I then keep it in the fridge for about one hour and it works perfectly.

Once your ganache is well chilled and your cupcakes are also nice and cold, it's time to move on to decorating! :o)
Please note that if your ganache is not cold enough, it will split immediately! And you'll have to start all over again... So really respect the overnight fridge rule or cheat like me — it's the minimum required for everything to go smoothly.
Take the well-chilled ganache and re-whip it with the whisk attachment of your stand mixer to whip it up. A bit like whipped cream.

Whip your ganache until it becomes firmer and you see a peak form on your whisk.
I always stay close by when I do this, because it's very easy to over-whip a ganache and split it... And if you split it, well, it's ruined.
Whip the ganache for 1 to 3 minutes, but this will really depend on the quantity, the temperature...etc.
As I mentioned at the beginning, this ganache was used for my pumpkin cupcake recipe, so I put it in a piping bag and piped it onto the cupcakes. ;o)

Quelle serait les quantités pour une ganache montée (au chocolat au lait ) pour pouvoir garnir l’intérieur de la génoise et l’extérieur ? (J’aimerai agrémenter tout ça avec une compotee à la poire et un croustillant -praliné )
