Apple-Speculoos Yule Log
Hey foodies!
The Christmas season is gently approaching and even though I know we still have a little time, I also know that some of you like to do test runs before the big day. :o)
So here is my apple-speculoos-caramel yule log made with our Christmas baking equipment.
A caramel mousse, a caramelised apple insert, a speculoos biscuit and a speculoos crunch. :o)

To make this yule log, you will need:
For this recipe, one jar of salted butter caramel will be enough. :o)

- 2 gelatine sheets
- 300g of apples (3 apples)
- 42g of butter
- 30g of sugar
- 30g of glucose
- 135g of speculoos crumbs
- 53g of butter
- 32g of speculoos crumbs
- 40g of butter
- 40g of sugar
- 40g of flour
- 1 egg
- 3 gelatine sheets
- 450g of full-fat cream
- 225g of mascarpone
- 180g of caramel
- 50g of water
- 10g of powdered gelatine
- 150g of white chocolate
- "Ochre-caramel" gel food colouring
- "Golden Ginger" shimmer dust
- 75g of water
- 150g of sugar
- 150g of glucose
- 100g of sweetened condensed milk
Let's go!
Salted butter caramel
For this recipe, you will need a jar of salted butter caramel. The recipe can be found here: CARAMEL
The recipe is illustrated and explained, so no need to panic. :o)

Caramelised apple insert
To start, soften 2 gelatine sheets in very cold water.

Peel and cut 300g of apples (about 3 apples) into small cubes of about 1 cm.
I used Gala apples which are nicely sweet and slightly tangy.

Pour your 300g of diced apples into a pan, then add 42g of butter.
Heat your pan over medium heat so as to melt (cook) your apples a little in the butter.
Let them cook for 5 minutes.

Add 30g of sugar and 30g of glucose to your apples, then continue cooking for a further 5 minutes.
Your apples will become slightly translucent and tender. Be careful not to turn them into mush! :o) We want proper caramelised apples.

Squeeze out your gelatine sheets, then add them to your apples.
Mix everything well so that the gelatine is distributed throughout all the apples.
I used the new yule log insert mould from Silikomart. It's great because it's a mould with two options! On one side you have a large insert and on the other a small insert. Perfect for the Meringa mould or the Corallo mould we're using today. :o)
Take your insert mould on the wide side. Fill it with the apples and the apple juices as well.
Press down lightly with a spatula and tap your mould once or twice on your work surface so the apples spread out evenly everywhere.
Place your mould in the freezer for a minimum of 3h. It can of course stay there longer.

Now we are going to make the speculoos crunch.
Speculoos crunch
In a food processor, pour 35g of speculoos crumbs and 53g of butter. Blend both ingredients well to obtain a paste.

Add 100g of speculoos crumbs and blend for an additional 2-3 seconds. This way, you will get a nice crumbly dough.

Get yourself a perforated baking tray and a silicone mat.
Preheat your oven to 180°C, fan-assisted.
Place an adjustable frame on your silicone mat and add the middle bar to get a nice rectangle of approximately 10 x 27 cm.

Pour the crumbly dough into one half of the mould and press everything down with a fork.
Set everything aside while we prepare our speculoos biscuit.

The crunch is ready, we can now make the speculoos biscuit.
Speculoos biscuit
Pour 32g of speculoos crumbs, 40g of butter and 40g of sugar into a food processor.

And blend everything to obtain a crumble-like mixture.
Then add 40g of flour. Blend again for a few seconds.

Then add 1 egg and blend for about 1 minute until everything is well combined.
The texture of the dough should be nice and smooth.

Pour the speculoos batter over the speculoos crunch and use an offset spatula to smooth everything out.
Once the mixture is well smoothed, bake your biscuit in your oven preheated to 180°C, fan-assisted for approximately 15 minutes. It should slightly colour on the edges.

When out of the oven, run a knife around the edge of the mould so the biscuit doesn't break when unmoulding.

When the biscuit is lukewarm, remove the frame. Then grab the template: HERE
It measures 24.6 x 5.4 cm. Cut it out with scissors, then cut the biscuit to the right size. :o)
Then let it cool completely.

All that's left to do is make the caramel mousse to assemble our yule log.
Caramel mousse
Important: only make your mousse once your caramelised apple insert is fully frozen.
To do this, soften 3 gelatine sheets in very cold water for a good 5 minutes.

Pour 50g of full-fat cream into a saucepan and bring it to the boil.
Remove the saucepan from the heat, then add the softened gelatine. Whisk well so that all the gelatine can melt into the cream.

In a bowl, pour 180g of salted butter caramel.
Then pour the cream/gelatine mixture over the caramel and whisk to obtain a smooth, liquid mixture.
Set aside for a few minutes.

In another bowl, whip 400g of full-fat cream and 225g of mascarpone at medium speed.
It is important to whip at medium speed to create lots of small air bubbles in the cream. If you whip too fast, your cream will deflate more quickly afterwards...
The cream and mascarpone should just be whipped! As soon as a small peak appears, stop your mixer.

Gradually add the caramel/gelatine mixture to your cream/mascarpone mixture.
I recommend doing this in 3 goes so that everything is incorporated gently and your cream doesn't deflate.
You can easily mix with a whisk since our cream wasn't whipped too stiffly. :o)

Get your yule log mould. I used the Corallo mould of 1.4 litres which I find super classy. :o)
Pour all of your caramel mousse into the mould. Then tap your mould on your work surface so the mousse fills all the corners of the mould.

Finish by spreading the mousse in the mould with a small offset spatula, this will prevent any holes when unmoulding.

Unmould your caramelised apple insert and place it in the caramel mousse making sure to put the rounded side facing down.
Press your insert down firmly, so that there is still room to add the biscuit afterwards. It is normal for the mousse to rise up on the sides.

Cover the insert with caramel mousse. This way, your biscuit will adhere much better afterwards.
Place the biscuit (crunch side up) on top of your yule log.
Press down slightly on the mousse again so that the biscuit is well pressed against your entremet and doesn't stick out of the mould.
Once the biscuit is well placed, smooth any remaining mousse and place your yule log mould in the freezer for a minimum of 6h.
It is very very important that your yule log is completely frozen before unmoulding. If you don't leave enough freezing time, it will be a disaster when unmoulding! I'm sure you've all seen the fails on "The Great British Bake Off"?

Mirror glaze
Last step!
For the mirror glaze, you absolutely need a thermometer! It's essential!
For a much less gelatinous and more homogeneous texture, I strongly recommend using powdered gelatine rather than sheets! The result speaks for itself.
To start, pour 50g of cold water into a bowl.
Then weigh out 10g of powdered gelatine using the digital scale spoon.
Personally, I always use fish gelatine, as it gives an amazing result!

Pour the gelatine into the cold water and stir lightly with a spoon.
Let the gelatine bloom for approximately 10 minutes.
In another bowl, pour 150g of white chocolate.

Add gel food colouring and shimmer dust.
I chose to add the "ochre-caramel" coloured food colouring and the "Golden Ginger" shimmer dust to add some bling to my glaze.
You can of course choose a different colour of food colouring if you wish, but only use gel or powder food colourings.

In a saucepan, pour 150g of sugar, 150g of glucose and 75g of water.

Stir lightly with a spatula then heat the mixture to 103°C.
Once the right temperature is reached, remove from the heat immediately.

Place the gelatine on the chocolate, then pour your sugar syrup over the chocolate.

Let the chocolate melt for a few seconds, then stir with a spatula. A beautiful golden colour will appear.
Finally add 100g of sweetened condensed milk and stir again.
Only sweetened condensed milk works... The unsweetened version is too runny.
Pour the glaze into a tall jug so that we can blend it without adding air bubbles.

To blend your glaze, there are several parameters to follow:
- use a tall pot or jug.
- use an open or semi-open blender near the blade. The Bamix being the absolute best! Closed blenders will create a lot of bubbles in your glaze.
- Do not move up and down while blending.
Blend your glaze for 1 to 2 minutes. It is important to blend it long enough for the texture to be perfect.
With a Bamix, you will barely see any bubbles appear.
Once well blended, cover your glaze with cling film pressed directly onto the surface and let it cool to approximately 30-32°C.
Let it cool at room temperature. No fridge!

Once the temperature of 30-32°C is reached, blend your glaze again for 20-30 seconds to give it some fluidity.
And there you go! It is ready to use between 29 and 32°C maximum.
A mirror glaze is always poured over a frozen dessert! If your dessert is not frozen, your glaze will not set.

To glaze your yule log, you will need a cooling rack and a drip tray.
Unmould your yule log and place it on your rack with the tray underneath.
Glaze the yule log being very very careful to put glaze everywhere! Don't hesitate to go over the same spot several times to make sure everything is covered.
Ideally there should be two people so one glazes and the other points out any spots without glaze, but you can manage on your own too. :o)

Once the glaze has been poured over the yule log, let it finish dripping before moving it.
If you move your yule log too quickly, your glaze will continue to drip onto your serving plate... Not ideal.
So be patient! Leave it on the rack for at least 3 minutes.
You can collect the glaze from the tray to reuse it within 7 days. You will need to keep it in the fridge and warm it up in a bain-marie to use it again. Don't forget to blend it before using.
To move your yule log without damaging its glaze, I recommend sliding a large offset spatula underneath.
Be careful not to rotate your yule log. You need to be patient and very gentle. :o)

And there you have it, my apple-speculoos yule log!
Once the yule log is glazed, allow a minimum of 6-8h of thawing in the fridge before enjoying it.

Don't hesitate to prepare this entremet over several days. One day for the insert, the caramel and the biscuit, and another for the mousse and the glaze for example.

Si non, je peux préparer le glaçage miroir et le conserver au congélateur et le ramollir au bain-marie et passer au bamix et l'appliquer sur la bûche congeler min. 8h avant la dégustation? Merci beaucoup pour votre retour

Je pense que j’ai attendu trop longtemps avant de les mélanger ensemble, mais est-ce normal que ce mélange finisse carrément en chantilly à la fin?

Je la fait pour le 25 décembre à 12h00. Es que je vais faire mon insert le 21 décembre, ensuite le 23 mon biscuit et la crème pour faire le montage le 23 et la décoré le 24 dans l'après-midi. Mais peut elle rester du 24 après-midi jusqu'au 25 au moment de dégustation ? J'ai soucis qu'en la décorant le 25 le matin tôt elle est pas vraiment entre 6h00 et 8h00 décongélation au frigo. Pouvez vous m'aiguiller ? Es que mon organisation est juste ?

3) toujours pour le glaçage miroir, je n’ai pas de mixeur ouvert ou semi ouvert (j’ai le mixeur plongeant silvercrest acheté chez Aldi) qu’elle(s) alternative(s) j’ai pour le réaliser ?

By: Karin On 2021-12-16pour votre message. Pour bien il faudrait vous diviser le travail sur 3 jours mais cela dépend de votre temps. Etant donné qu'il faut bien 6h pour que votre bûche décongèle. Du coup je vous conseille de faire l'insert le 21 puis le biscuit et la mousse le 22, assemblée le tout puis la mettre au congèle pour que le 23 vous puissiez faire votre glaçage miroir et démouler votre bûche. De cette manière votre bûche pourra rester au frigo jusqu'au 24 au soir. Cela dépend de votre temps pour chaque jour car l'insert doit rester minimum 3h au congèle. Vous pouvez très bien commencer votre bûche le 22 au matin avec l'insert et poursuivre avec la mousse et le biscuit pour réduire le temps de pâtisserie à 2jours. :-)

Par contre j'ai l'autre moule à insert classique blanc est ce que je peux utiliser celui là ? Et j'aimerais aussi réaliser les bûches choco orange épices et choco caramel. Je souhaite gagner du temps en préparant mon entremet à l'avance. Combien de temps puis-je le laisser au congélateur ? Avant glaçage bien sûr et dans le moule. D'une manière générale, y a-t-il une règle qui s'applique ? Il s'agit de le faire une semaine à l'avance, pas plusieurs mois. Merci à vous.

Déjà merci pour vos recettes tellement bien expliquées (comme si vous étiez à côté de nous ?) et tout le matériel disponible chez vous et rapidement envoyé chez nous ??
J’ai 3 questions:
-je viens de mettre ma bûche au congélateur mais j’ai l’équivalent de 2 à 3 cuillères à soupe de crème caramel qui est ressortie, vous pensez que c’est possible ou que j’aurais mal tassé la crème dans le moule corallo?
-pour mon glaçage miroire puis-je remplacer le chocolat blanc et le colorant alimentaire par simplement du chocolat dulcey?
-pour la manger le 24 au soir, je peux faire mon glaçage le 24 fin de matinée et la laisser dégeler au frigo ou faut-il le faire plus tôt?

Par contre il vous faut la conserver au frigo dans une boîte en carton. Et ne surtout pas l’emballer dans un cellophane car celui-ci collerait à la bûche. : o)

By: Karin On 2019-12-17Oui sans soucis. Par contre le moule corallo fait 1.4litre contre 1.2 litre pour le starlight donc ne remplissez pas autant votre insert... Vous aurez 200gr de trop (pour toute la recette). Mis dans un petit bol pour le gouter c'est parfait. Salutations.
