Angled & straight palette knives
There are 27 products.
An angled palette knife is one of the most important tools for cake making: use it to cover and smooth cakes with buttercream, ganache or Swiss meringue, spread sponge batter on a tray and lift finished small cakes cleanly. We stock angled and straight palette knives in stainless steel, from mini to a 45 cm maxi, with wooden, plastic or soft-grip handles. There is also a 37.5 cm spreading knife, a set of fine decorating spatulas and chocolate scrapers in 14 and 16 cm.
Tips: which palette knife for which job?
- Angled or straight: thanks to the angled blade, your hand stays above the surface rather than in the cream – ideal for cake tops, traybakes and Swiss rolls. Straight palette knives work well on the sides of the cake.
- The right size: mini and small knives for cupcakes, small cakes and fine details, medium and large ones for whole cakes, and the maxi for large surfaces.
- Working with chocolate: use the chocolate scraper to scrape chocolate, portion dough and spread icing.
- A smooth finish: dip the palette knife briefly in hot water and dry it – it will then glide perfectly over the buttercream.
Frequently asked questions about palette knives
What length of palette knife suits my cake?
The blade should reach at least to the centre of the cake so you can smooth the top in just a few strokes. For most birthday cakes a medium angled palette knife is enough; for large cakes and traybakes, choose the large angled palette knife or the maxi.
Wooden or plastic handle – which is better?
Wooden handles feel classic and warm in the hand, while plastic and soft-grip handles offer a particularly secure grip – it is mainly a matter of taste. More important is a thin yet sturdy stainless steel blade that glides cleanly over the cream.
