Starlight Yule Log
Hey foodies!
You asked me so many times for this Starlight yule log that I finally gave in! :o)
I have to admit it's so beautiful that it didn't take much convincing to have fun making it!
I needed to find some great new flavours (see my first tutorial on the strawberry-lime yule log), knowing that I absolutely wanted my stars to be bright yellow... So I dug and dug and finally went for two flavours I love! Passion fruit and raspberry!
The result is absolutely delicious! It's fresh and bursts with flavour in your mouth! Perfect for a Christmas dessert!
I made a passion fruit mousse, with a first passion fruit jelly insert and a second raspberry mousse insert with fresh raspberries!
Look at the result! Thank you Silikomart for inventing this magnificent mould! I love it!

For this yule log you will need:
Passion fruit jelly insert
2.6g of fish gelatine powder
13g of water
87g of passion fruit purée
20g of glucose
6g of sugar
9 fresh raspberries
Raspberry mousse
2.3g of fish gelatine powder
12g of water
81g of raspberry purée
18g of sugar
50g of heavy cream
Joconde sponge
75g of icing sugar
70g of almond flour
2 eggs
25g of flour
2 egg whites
12g of sugar
Chocolate star mat
40g of white chocolate
10g of white chocolate
Yellow powdered chocolate colouring
Passion fruit mousse
4.2g of fish gelatine powder
21g of water
21g of passion fruit purée
58g of heavy cream
26g of sugar
26g of glucose
48g of marzipan
225g of heavy cream
26g of passion fruit purée
Passion fruit jelly insert
Start by weighing 2.6g of fish gelatine powder with your precision scale. I really like fish gelatine, which is much less elastic than gelatine sheets. The texture is much better with powdered gelatine. All great French chefs use powdered gelatine.
Then add 13g of cold water and stir for a few seconds with a spoon. Set aside.
Next, in a saucepan, pour 87g of passion fruit purée, 20g of glucose and 6g of sugar.
It is important to work with glucose, because when frozen, sugar crystallises and the texture becomes harder and less pleasant in the mouth. We want something creamy and soft.
Heat the mixture to a boil. Once boiling, leave it for about 1 minute. Then remove from heat and add the softened gelatine.
Whisk so that the gelatine melts well and everything is nicely homogeneous.
Pour your jelly into a jug to make it easier to pour. A small jug... If you don't have a jug, a squeeze bottle without a tip will work just as well.
Pour the rest into 3 cavities of the mini yule log mould. Fill the cavities about halfway... You need to leave room for the raspberry mousse.
Here I used this mini yule log mould because the Starlight yule log doesn't have an insert... And I think a yule log without an insert is a shame. So I improvised with 3 mini yule logs that will become the perfect insert for this log!
Once the jelly is poured, place 3 fresh raspberries in each cavity. This will add freshness to your dessert.
Then place your mould in the freezer for at least 1 hour. The top of the jelly needs to set before you pour the raspberry mousse over it.
Raspberry mousse
Start by combining 2.3g of powdered gelatine with 11.5g of cold water and leave to set for a few minutes.
Pour the 81g of raspberry purée into a saucepan. If you only have one yule log to make, you'll be better off using 81g of fresh raspberries.
Add 18g of sugar and bring the mixture to a boil.
Remove from heat, then add the softened gelatine to your raspberry purée. Whisk until the gelatine is completely melted.
Set your mixture aside in the freezer while you make the whipped cream. Be careful not to leave it too long. You just want to cool it down... Not freeze it.
Whip the 50g of heavy cream. Given the small quantity, I whipped the cream by hand... Super quick! But make sure to use heavy cream and not light cream! We want a whipped cream that isn't too firm.
Check the temperature of your raspberry purée. It should drop to 25°C. If it is still too warm, put it back in the freezer and check every 5 minutes.
Once the raspberry purée is at the right temperature, fold it into the whipped cream by whisking gently.
If your raspberry purée is too warm, your cream will melt and become liquid! It is therefore very important to incorporate it at the right temperature. A thermometer is essential in patisserie!
Pour your mixture into a jug and fill your 3 cavities to the brim.
Then place the mould in the freezer for at least 4h. You can easily make your insert a few days in advance! No need to do everything in one day.
For the sponge, I wanted a change... I often make a financier sponge or a génoise... But this time I needed something new!
So I went for a Joconde sponge which is very light and absolutely delicious!
With this recipe you can make two yule log slices or one slice and eat the rest. That's what I did... Greedy as I am! :o)
Joconde sponge
Preheat your oven to 170°C, fan setting.
Then pour 75g of icing sugar and 70g of almond flour into a bowl and mix with a spoon. I always use extra fine almond flour. No need to sift it! It's magic!
Set the mixture aside.
Then whisk the 2 whole eggs in a bowl until foamy. I used 110g of eggs which equals 2 standard eggs. But not the budget eggs at 46g... Check the box, the weight of the eggs is always listed.
Then add the icing sugar and the almond flour and whisk until you get a nice ribbon (a smooth, fluffy texture but not liquid).
Using a sieve, sift the 25g of flour into the egg/sugar/almond mixture, and fold it in with a spatula.
Set the mixture aside for a few minutes.
Then, in another bowl, pour 60g of egg whites with 12g of sugar.
Whisk to obtain a beautiful meringue.
Now it's time to combine our two mixtures.
Pour a little meringue into the first mixture and fold with a spatula. Then add the rest and do the same.
Your batter should be well mixed and homogeneous.
The Joconde sponge is even lighter than a génoise! I love it!
Cover your perforated baking tray with parchment paper. Then place your adjustable frame on top at a size of 20 x 30 cm.
Spray your mould and the parchment paper with demoulding spray! Essential for a beautiful sponge that comes off easily.
Pour your Joconde sponge batter and smooth it out with a scraper, so that the mixture is as even and smooth as possible.
Bake the sponge for 10-12 minutes at 170°C, fan setting.
Once baked, let it cool, then remove from the mould.
Chocolate star mat
Now let's move on to the chocolate star mat.
In a bowl place 40g of Callebaut white chocolate.
Place it in the microwave at 460W for 30 seconds, mix then put it back for 30 seconds.
The chocolate should reach 45°C. Once the chocolate is at 45°C add 10g of unmelted white chocolate.
Let it melt for a moment while stirring until everything is melted.
Once the chocolate is fully melted, add the yellow powdered colouring, you can adjust the quantity depending on the colour you want.
Place your chocolate into a piping bag.
Using a scraper, push your chocolate to the tip of your piping bag.
Little tip: To prevent the chocolate from coming out of the bag, you can put a clip on it.
Cut a small piece off the end of your bag but not too big.
In the Starlight yule log kit, there are two mats, one smooth and one with stars.
For this yule log, we will use the one with the stars.
Spread the chocolate into the stars in the middle as shown in photo no. 3.
Using an offset spatula, spread the chocolate into all the stars.
It is important that there is chocolate only in the stars, otherwise when unmoulding you will have yellow marks on your mousse.
Once the chocolate is well spread and distributed into all the stars, leave the mat for 5 minutes at room temperature.
The mould consists of 5 parts.
Place the 2 end pieces in the bottom of the mould, then the mat and then the top part that holds the mat in place.
Refrigerate while we make the passion fruit mousse.
Passion fruit mousse
Pour 4.2g of powdered gelatine into a bowl, then add 21g of cold water and stir with a spoon. Then set aside to allow the gelatine to dissolve in the water.
Pour into a saucepan 58g of heavy cream with 21g of passion fruit purée, 26g of sugar and 26g of glucose.
The glucose will add smoothness and creaminess to the mousse.
Set aside. We'll just deal with the marzipan before heating the mixture.
Don't remove the marzipan from the recipe, it will add texture to the mousse, but you won't taste it. ;-)
Now cut 48g of marzipan into small cubes and place them in a tall jug (so you can blend with a Bamix afterwards). Unfortunately this product is no longer available in our range but can easily be found in supermarkets.
Then pour the gelatine over it and set aside while we heat our mixture (passion fruit/cream/sugar/glucose).
Then heat the passion fruit/sugar/glucose/cream mixture until boiling.
Once the mixture has come to a boil, pour it over the marzipan and gelatine. Leave to melt for a few minutes.
Then blend the mixture with a Bamix, so that everything melts and combines. You will need to blend for about 2 minutes.
The mixture will be liquid. This is normal.
Let the mixture cool down. It must drop to 25°-30°C before incorporating it into our whipped cream!
Once the mixture is at the right temperature, pour 225g of heavy cream into a bowl with 26g of passion fruit purée and whip into a chantilly cream.
Then pour the marzipan/passion fruit mixture into the whipped cream in 3 additions and fold with a spatula so that everything incorporates properly.
Be careful not to deflate your mousse! If everything becomes liquid, it means you didn't respect the temperature of the almond/passion fruit mixture.
We're almost there! Woohoo! Keep going!
In the meantime, let's cut the sponge. Cut a rectangle of 6.5 cm x 24.5 cm. Use a ruler so your rectangle is nice and straight.
The remaining sponge can be wrapped in cling film and frozen for a future yule log or entremet.
Cut 1 of the 3 inserts as it is slightly too long... Cut 2 cm from one of the 3 inserts.
Attention! You don't need to cut 2 cm from each insert, just 1 of the 3 that we are going to use. :o)
Then pour approximately 300g of passion fruit mousse and smooth with an offset spatula.
Place the 3 inserts (as close together as possible) in the middle of your yule log.
You can push the inserts into the mousse so they are level with the mousse.
I then added 100g of passion fruit mousse on top, which I smoothed with an offset spatula.
Then place the sponge on top of the yule log. If you cut it just right, it will fit perfectly into your log.
Gently press on the sponge so that it adheres well to the mousse.
Then place your yule log in the freezer for at least 6h!
You can easily prepare your yule log now (9th December) for Christmas and keep it in the freezer.
Mousses can stay in the freezer for up to 3 weeks without changing texture. Take advantage of preparing your Christmas dessert in advance! :o)
Your yule log is now well frozen, all you need to do is unmould it. Nothing could be simpler, you'll see!
First grab a yule log base so you can place it once unmoulded.
Then remove the top of the yule log mould, then the bottom.
Continue by removing the silicone sides.
And finally, carefully remove the silicone mat which will reveal our beautiful stars!
And there you have it! Job done!
If you have several yule logs to make, you can easily prepare them 3 to 4 weeks in advance, unmould them and keep them in a yule log box in the freezer.
Allow 6-8 hours for your yule log to defrost properly. You can of course defrost it the day before without any problem and keep it in a cardboard yule log box so it doesn't absorb any fridge odours.

By: Karin On 2023-12-12Ici, le moule Starlight fait 1200ml. Si vous avez un moule à bûche de 1300ml (comme notre moule standard de Silikomart), il vous suffit de multiplier les ingrédients de la mousse par 1,1 , et pour l'insert par 2,1.
Concernant le biscuit, vous pouvez suivre la recette.

La bûche est au congélateur, merci pour la recette. J’ai eu un soucis avec la chantilly car je n’ai pas de fouet électrique ou de Kitchen Aid. Je travaille au Companion alors je ne sais pas si c’est ça mais après 1m30 environ, la crème a tranché alors que normalement une crème sans mousse dedans, met 3-4 min pour être en chantilly. Du coup j’ai refait, heureusement j’en avait encore mais ce n’était pas une magnifique chantilly légère.
Problème aussi avec les œufs et la poudre d’amandes au début, c’est resté assez liquide donc le biscuit est assez plat mais bon quand même. Une astuce ?
Autre question: est-ce possible de faire moins de biscuit vu qu’on en utilise 1/3 ?

En effet, ce n'est pas la saison. Vos purées de fruits ont l'air top, mais conditionnées en trop grosse quantité.

By: Karin On 2019-12-26Alors j'ai en effet pas mal de clients qui ont galéré avec la gelée. Mais une de mes clientes (MrsMartinez sur instagram) les a testé en chocolat et le résultat est magnifique. Ça se décolle tout seul! :o) Donc je vous conseille vivement de colorer du chocolat blanc avec de la poudre jaune et de faire les étoiles en chocolat plutôt qu'en gelée.

By: Karin On 2019-12-16Alors oui et non... La pâte d'amande c'est du massepain fait pour la cuisson. Vous en trouvez à la migros et à la Coop. Sous différent nom... pâte d'amande, massepain de cuisson, masse d'amande...etc... Il ne faut juste pas prendre le massepain de décoration. :o)

By: Karin On 2019-12-13Oui bien sûre vous pouvez faire vos purées maison. Par contre pensez à bien chiner (enlever les grains de framboises) car sinon ça va vous donner une bûche croustillante ce qui n'est pas super agréable. :o)

By: Karin On 2019-12-10Pour cette bûche je ne conseille aucun des deux. Elle est jolie telle quel, sans spray ni glaçage. :o)
Si vous faites un glaçage miroir sur les étoiles, vous ne les verrez plus je pense.
Vous pouvez aromatiser le glaçage miroir si vous désirez oui. Par contre non la gelée passion n'est pas un glaçage miroir...
Sincèrement je ne l'aromatiserait pas... La mousse et les inserts suffiront amplement niveau goût. :o)

Donc au moment du démoulage, sprayez votre bûche, puis laissez-là décongeler au frigo.

Je ne vous conseille pas de remplacer la pâte d'amande par autre chose... Cela modifierait le goût et la texture.
Vous trouvez de la pâte d'amande dans les grandes surface sans soucis.

La seule fois ou j'ai eu un problème c'est quand j'ai préparé mon tapis 3-4 jours en avance en le laissant dans le congélateur... C'est la seule fois que mes étoiles ont collé au tapis... Donc je conseille de préparer le tapis le même jour que le montage de la bûche. Voir un jours à l'avance mais pas plus.

Il n'y a que les purées de fruits qui sont industrielles. Vous pouvez sans soucis prendre des framboises fraîches si vous le désirez.
Le reste n'est pas industriel... De la crème, de la pâte d'amande, du sucre...etc...

De cette manière je peux remplir mes étoiles sans soucis. Il y a juste celles tout au bord qui se vident légèrement...
Du coup je ne les utilise pas celle-ci. :o) Mais aucun problème avec toutes les autres.
Ma gelée est bien liquide aussi. A mon avis c'est un soucis de support.

Tes feuilles de gélatines font 1.66gr. Donc si je mets 3gr de gélatine en poudre, il faut mettre 3gr de feuille de gélatine.
Tu peux les découper sans soucis pour avoir le poids juste.
Est-ce compréhensible?

By: Cakelicious-Team On 2018-12-10Christelle: Oui le moule à bûche tablette de Silikomart irait sans soucis vu qu'il est en silicone et qu'il fait 1.3 litre (le starlight fait 1.2litre).
Par contre il faut bien prendre les mini bûches pour l'insert ou l'insert en plastique et couper un bout. L'insert en silicone de chez Silikomart sera trop gros pour cette bûche ci. Je déconseille la bûche en inox pour une mousse car ses pieds sont amovibles et donc pas 100% étanche.
Et le démoulage est plus compliqué... J'espère avoir pu aider. :o)
