Milk rolls
Hey foodies!
This week, I want to share a typically Swiss recipe with you! :o)
I'm generally more of a fan of French pastry than Swiss pastry. But you have to admit there are some really great things in our lovely country! :o)
So this morning, I'm sharing a recipe for milk rolls, made using our dedicated baking equipment.
So delicious for breakfast or a mid-morning snack. :o)

Here is the list of ingredients (for 12-13 milk rolls):
- 500gr white flour
- 6gr sugar
- 12gr salt
- 300gr milk
- 20gr water
- 10gr dry yeast
- 55gr butter at room temperature
- 1 egg yolk
- 1 tsp heavy cream
Start by pouring into a large bowl 500gr of white flour and 6gr of sugar.

Add 12gr of salt and mix the 3 ingredients together with a spoon.

In a small bowl, pour 300gr of milk with 20gr of water and heat the mixture in the microwave at 600Watt for 30 seconds.
Using a scale spoon, weigh 10gr of dry yeast and add it to the milk/water mixture.
Mix the yeast into the milk and let it rise for 2-3 minutes. Letting the yeast rest briefly in the warm milk will allow it to develop even more afterwards.

Once the 2-3 minutes are up, pour the mixture into the flour and add 55gr of butter at room temperature.
Knead everything with the dough hook for 5 minutes at speed 1. It is very important to stay at low speed so that the dough doesn't get too warm.

Continue kneading the mixture at speed 2 for 10 minutes.
To check that the dough is well kneaded, cut it in half with a knife. If you see nice air bubbles like in the second photo below, it means the dough is properly kneaded.
Shape it into a nice ball in your bowl.

Cover the bowl with a damp cloth and let the dough rise for 45 minutes at room temperature.
Once the 45 minutes are up, your dough will have risen nicely! :o)
Turn it out onto the work surface.

Weigh out pieces of 65-70gr and round each small piece of dough.
Here is an explanatory video to help you with the rounding technique:

Shape a nice ball then flatten it.
Flour a 5 mm rod and mark your milk rolls.
Press the rod in firmly, almost all the way down. Stop about 2 mm from the bottom.
It is important to make a deep enough indent because our little rolls will puff up quite a bit afterwards.

Place the rolls on a perforated baking tray lined with a perforated mat.
These two tools will make all the difference! Even baking, beautiful colour... in short, they are truly essential if you want nice-looking rolls, cookies or even choux pastry.
Place the rolls in the cold oven with a bowl of very hot water.
Let the rolls rise for 30-40 minutes without opening the oven.

In a small bowl, pour one egg yolk and 1 tsp of heavy cream.
Mix the two ingredients together with a brush.

Remove the rolls from the oven. They will have already puffed up nicely!
Preheat your oven to 200°C, fan-assisted.
The indent will have faded slightly, so we're going to re-mark it using a well-floured dough scraper.

Brush your rolls with the egg/cream mixture then bake them in the preheated oven for about 10-15 minutes.

And there you go!
These little rolls will be perfect for breakfast or a snack. :o)

Par contre j'ai commandé le tapis en silicone perforé et mes petits pains ont collés dessus, faut-il graisser le tapis?

J'ai juste pas fait comme vois j'ai mis farine, sel, sucre, levure, et beurre et j'ai mélanger et après j'ai mélanger eau et lait ensemble et petit 15 min et après j'ai fait comme vois et il son juste délicieux

Puis préchauffez votre four à 200°C, chaleur tournante et enfournez-les ;)

Le lendemain matin formez vos boules puis laissez à nouveau levez pendant 45-60min. :o)
