Madeleines with Kiri
Hello foodies!
Do your kids sometimes ask for savoury snacks?
I might have an idea for you! :o) How about a recipe for madeleines with ham and Kiri?
You can even make these madeleines all together, the recipe is so easy!

To make 24 madeleines, you will need:
- 100g whole milk
- 15g butter
- 2 eggs
- 80g flour
- 1 tsp baking powder
- 50g grated Gruyère
- 50g ham
- 6 Kiri squares
Let's get started with the recipe!
Start by melting 15g of butter in the microwave for 30 seconds at 600W. Set aside.
In a large bowl, crack 2 eggs.

Beat 2 eggs with a whisk.
Pour 100g of whole milk and the melted butter into the bowl with the eggs.
Mix well with the whisk.

Sift 80g of flour.
Add 1 tsp of baking powder. Use measuring spoons to measure the baking powder precisely.

Mix everything well until you get a smooth, lump-free batter.
Add 50g of grated Gruyère and mix again.

Cut 50g of ham into small pieces.
Add them to the previous mixture.
Mix everything well.

Prepare a piping bag in a jug. This will make it easier to fill the bag neatly.
Pour the batter into it.
Place a clip to close the piping bag so the batter doesn't come out.

Prepare a madeleine mold. I like to use the stainless steel one, as it gives the madeleines a lovely colour.
Spray the mold with non-stick release spray so the madeleines don't stick and come out easily.
Preheat the oven to 180°C, fan-assisted.

Cut the tip off the piping bag.
Fill the cavities halfway, as we will be adding the Kiri afterwards. ;o)

Cut one Kiri into 4 pieces lengthwise.
To make 12 madeleines, I used 3 Kiri.

Place 1 piece of Kiri per madeleine lengthwise, then cover the Kiri with the remaining madeleine batter.
Place the madeleine mold on the oven rack and bake for 12 minutes in the middle of the preheated oven.

Once the madeleines are baked, place them on a cooling rack.
The recipe makes 24 madeleines and our mold holds 12. Once the first batch is baked and the mold has cooled down, make the second batch.

Here are some lovely savoury madeleines that will keep for 2 days in a box in the fridge.

By: Florence H. On 2024-01-12Bonjour, j'ai fait cette recette dans le moule à barres céréales (emplacements rectangulaires). J'ai pu remplir avec la recette 9 emplacements et on s'est régalés. Je n'avais pas de jambon, j'ai mis plus de sbrinz. Merci pour cette recette.
