Cookies
Hey there, sweet tooths!
Today, I have a deliciously indulgent recipe for you.
A great idea for coffee time or a snack that everyone will love. :-)
Chocolate chip cookies, gluten-free and also available in a vegan version.

To make about 25 cookies, you will need:
- 70gr of butter (plant-based butter)
- 100gr of sugar
- 50gr of whole milk (oat or soy plant-based milk)
- 1 tsp vanilla extract
- 2 pinches of salt
- 120gr of gluten-free or semi-white flour
- 75gr of almond flour
- 1 tsp cornstarch
- 1/2 tsp baking soda
- 120gr of dark chocolate (vegan chocolate)
In the mixer bowl, pour 70gr of butter (plant-based butter) and 100gr of sugar.
Using the whisk, whip the sugar and butter at maximum speed for 10 minutes, the mixture should turn pale.
Add 50gr of whole milk (oat or soy plant-based milk).
Using measuring spoons, measure 1 tsp of vanilla extract and add 2 pinches of salt.
Mix everything with the whisk at maximum speed for about 1 minute.
Add 120gr of gluten-free flour, I found it at Migros, it's a flour blend.
However, you can also use standard semi-white flour.
Add 75gr of almond flour and 1 tsp of cornstarch.
Also add 1/2 tsp of baking soda.
Since there are no eggs in this recipe, it is important to finish mixing by hand in order to get the right texture. Use a spatula to help.
Once the mixture is well combined, add 120gr of dark chocolate (vegan chocolate) and mix everything with the spatula.

Preheat the oven to 180°C, fan-assisted.
Place a silicone mat on a perforated baking tray.
Using a cookie dough scoop, form small balls of dough.
Press lightly on each ball to flatten them and get nice-looking cookies.
Bake the cookies in the middle of the preheated oven for about 8 minutes.

And there you have it, lovely cookies that will please everyone! :-)
At our place, they were eaten very, very quickly. ;-)
They will keep for 5 days in a tightly sealed container.
