Caramelized Almonds
Hey there, foodies!
This week, I wanted to share a fun fair treat with you! :o)
Who hasn't given in to a market or funfair stall selling caramelized almonds?
In our house, the whole family is a fan! Barely cooked, the kids jump on them... And so do I!

To make them at home, you'll only need 4 ingredients:
- 200gr almonds (with skin)
- 200gr sugar
- 200gr water
- 1 tsp vanilla flavoring

Pour 200gr of sugar into a saucepan and add 200gr of water, then bring the mixture to a boil.

As soon as the sugar has melted, add 200gr of almonds.
And reduce the heat to medium! This is very important! If you heat it too high, your almonds will burn.

Let the water evaporate gradually. This will take about 10-15 minutes.
Stir every 2 minutes or so to make sure the almonds are well coated with the sugar syrup.

After 5 minutes, add 1 tsp of vanilla flavoring. It will give our almonds a lovely taste.
After 10-15 minutes of cooking, the water will have evaporated and the sugar will turn sandy. This is NORMAL! :o) Don't panic, it's part of the process.
Keep stirring energetically to coat the almonds with the caramel.
Make sure to reach the bottom of the saucepan with your spoon so nothing burns.

Keep on stirring. Don't stop!
You'll see the caramel gradually sticking to the almonds.
And little by little, the caramel will melt again. That's when we stop cooking. Have a look at my 2nd photo.
Once the right consistency is reached, pour the almonds onto a silicone mat.

Spread the almonds apart as much as possible so they don't stick together once cooled.
Let the almonds cool completely before eating them. If you eat them too soon, they will be a little soft... So be patient! Let them cool for at least 30 minutes.

And there you go! Enjoy! :o)
Of course, this works with hazelnuts, peanuts... etc... all kinds of nuts!
Last week I made hazelnuts-peanuts and they are also amazing!
