Cookie dough
To start, pour 100gr of sugar and 100gr of butter into a saucepan.

Add 60gr of water and 1/2 tsp of salt.
Measure 1 tsp of vanilla flavouring and add it to the rest of the ingredients. We love this flavouring, you've certainly noticed it already, it appears in many of our recipes! ;-)
Use measuring spoons to be precise.

Heat everything while stirring occasionally. Once it reaches a boil, remove the saucepan from the heat and set aside at room temperature for approximately 20 minutes.
I promise you this mixture will take you right back to childhood with its smell. It's just like real butter biscuits! ;-P

Once the 20 minutes are up, pour 250gr of flour and 1 tsp of baking powder into a large bowl.

Add the previous preparation then mix at low speed using the "K" beater until you get a crumble texture.
Finish mixing by hand until you obtain a smooth, homogeneous dough. Be careful, if you mix too much, the gluten will develop and your cookies will puff up during baking. Here, we want nice flat cookies. :-)

Between 2 sheets of baking paper, roll out the dough using a large rolling pin.
Use 3 mm cookie spacer bars to achieve an even thickness.
Slide the dough onto a tray and place the whole thing in the freezer for 15 minutes.
Prepare a perforated baking tray and a perforated mat for even baking.

Using the 7.5 cm fluted rectangular cookie cutter, cut out rectangles of dough and place them on the perforated mat.
We also made pencil-shaped cookies to echo the school theme. ;-)
Here is the template: PENCIL TEMPLATE
Using a knife, cut the dough with the template then place your cookies on the mat.
On the butter biscuit-shaped cookies, leave a little message using the message kit. This is a kit containing 85 letters, numbers and symbols along with a strip to create little messages.
Be careful to position the letters correctly so that the message reads the right way when you stamp your cookie.
Once the message is written on the little strip, position it on the cookie and press so that the message prints correctly.
If you're not sure the word is written in the right direction, check it with a mirror or your phone's camera in selfie mode. ;-)
You need to press evenly and firmly while making sure the letters don't go all the way through the cookies.
Tip: it is easier to create your little message on dough at room temperature than on frozen dough.
Let your imagination run wild with the little messages. For example: "thank you", "best teacher", "happy holidays"...
To create pencils with a more detailed and realistic appearance, use the back of a knife to mark the tip and the grooves.

Place the cookies in the freezer for 15 minutes before baking. This will help the cookies keep their shape during baking.
Preheat your oven to 180°C fan-assisted.
After 15 minutes in the freezer, bake the cookies for 10 to 12 minutes in the middle of the oven.
After baking, let them cool completely.

We're going to decorate the pencils to add a little colour. :-)
Decorations
Here, we opted for two colours of sugar paste in pastel tones. The sugar paste colour "Lemon" and the colour "Nude".
In our range, we have many pastel colours, go take a look and choose the colours you like most: PATE A SUCRE SCRAPCOOKING.
Before you start, make sure to dust your work surface with magic powder so nothing sticks when you work the sugar paste. :-)
Using a small rolling pin, roll out the sugar paste quite thinly (2-3 mm thick).
Place the cookie on the sugar paste and carefully cut around it with a knife. We are just going to cover the bottom of the pencil.

Apply a little edible glue to the cookie. With its built-in brush, this glue is very convenient.
Once the glue is applied, carefully place the sugar paste on the bottom of the cookie.

To add fine and realistic details, use the back of a knife to mark the two characteristic grooves of the pencil.
We are also going to draw the tip. To do this, take a chocolate pen and dip it in a cup of boiling water for 5 minutes.
Using the chocolate pen, draw the pencil tip.
Repeat the same process for the other cookies.
We also left some pencils without sugar paste, but feel free to decorate all of them. ;-)

Once the cookies are ready, it's time to move on to the next step: preparing a pretty box to gift them in.
In a small box, place some straw or tissue paper at the bottom, then add the cookies.

We arranged 2 butter biscuits and 2 pencils. Feel free to place as many cookies as you wish. :-)
To add a delicate floral touch, we chose to garnish the box with a yellow daisy and a pink sugar daisy.
And as a finishing touch, we carefully tied the box with a pretty little ribbon.

And there's the result!
The cookies will keep 1 to 2 weeks in a closed box.
You'll notice that we went for a look more aimed at female teachers but you can easily adapt it for a male teacher by changing the colour of the sugar paste and sugar decorations. Either way, this gift idea is sure to impress teachers! :-)
I wish you a lovely Sunday, foodies.
Sophie
