Rainbow Pancakes
Hey foodies!
Today I'm sharing a very colorful and above all very fun recipe!
Pancakes in rainbow colors. Perfect for a family afternoon!

This recipe is really simple. You'll just need a little patience for the cooking...
So, here is the list of equipment needed as well as the ingredients.

Ingredients:
- 1 egg
- 1 egg yolk
- 7gr baking powder
- 70gr brown sugar
- 180gr milk
- 50gr melted butter
- 160gr flour
- 1 tsp baking soda
- 2gr salt
- 1 tsp vanilla extract
Equipment:
- Gel food coloring (Progel)
- 1 scale spoon
- 1 frying pan
- Measuring spoons
- 1 spatula
- 1 whisk
- 6 bowls
- 6 spoons
Start by mixing the eggs, 70gr of brown sugar and 180gr of milk.

Then add 50gr melted butter and 7gr of baking powder.
You probably already know this, but I always use my precision scale to weigh small quantities (salt, pectin, gelatin or baking powder).

Then add 1 tsp of baking soda. For this I use my measuring spoons. This way I always have the right amount. I fill my spoon right to the top.
This set of measuring spoons includes 1 tablespoon, 1/2 tablespoon, 1 teaspoon and 1/2 teaspoon. It's the best!

I like to add a little vanilla extract to this recipe. I find it goes really, really well with maple syrup.
This extract is great for all kinds of baking! You'll find real vanilla with its little black seeds in it.
So I add 1 tsp of vanilla extract then 2gr of salt.
In sweet recipes, we always add a little salt to enhance the flavor. It gives your pancakes a little kick.

Finally add 160gr of flour and whisk until your pancake batter is nice and smooth.
Make sure there are no small lumps of flour left. You need to whisk the batter well.

Your pancake batter is ready! If you want to make classic pancakes, you can simply cook them in a frying pan and that's it.
But we want color! Well, once in a while it's nice!
For this we'll color the batter in 6 different bowls.

I use gel food coloring to color my pancake batter.
I hate liquid colorings that change the texture. Here I use gel colorings which are incredibly vibrant. They won't change your texture. So you can color macarons, fondant or as today, pancake batter. For me, Progel is the best brand of food coloring out there.
Watch out! They're very intense so just add a tiny touch of coloring to your pancake batter.
I divided my batter into 6 and colored each with the colors of my choice.


And that's it, we're ready! Now all that's left is to cook these beautiful pancakes!
However, there is one tip you need to know so your pancakes stay nicely colored without browning.
Well yes... If you heat your pan too much, your pancakes will brown too much and lose their color...
So here's what I did:
I set my pan to around 70°C-80°C. I'm lucky to have an induction hob that I can adjust. If you don't have the temperatures displayed, no worries! Put a thermometer in your pan and bring it up to the right temperature.
Then cook the first side and leave it for a few minutes until nice bubbles form. This way the pancake will cook all the way through to the middle.
Then flip your pancake for 10 to 20 seconds maximum. The first side will have browned nicely but that's okay. We'll use the other side which won't brown. This way the pancakes will be well cooked and fluffy but the color will stay nice and vibrant on one side.


There we go, all my pancakes are cooked!

To serve them, I whipped up some whipped cream. I topped my pancakes with it and then decorated the top with a little more whipped cream and my UNICORN glitter! I love it! I finished by drizzling a little maple syrup!
The result... So so good!
