Mini salmon muffins
Hello food lovers,
This week I'm sharing a savory recipe, perfect for appetizers or as a meal with a salad.
Mini smoked salmon and Gruyère muffins.

For 24 mini muffins you will need:
- 2 eggs
- 100gr flour
- 10gr baking powder
- 83gr milk
- 66gr rapeseed oil
- 66gr grated Gruyère
- 135gr smoked salmon
Start by cutting 135gr of smoked salmon into fairly small pieces.

Preheat your oven to 180°C fan setting.
In the mixer bowl, crack 2 eggs.
Add 83gr of milk and 66gr of rapeseed oil.

Mix with the whisk until the mixture becomes nice and frothy.

Add 100gr of flour and 10gr of baking powder.
Mix with the whisk at speed 2 for 30 seconds.

Using a spatula, fold in the 135gr of smoked salmon that we cut at the beginning of the recipe.

Add 66gr of grated Gruyère.
Mix all the ingredients well.

Transfer the batter into a piping bag.

Prepare the mini muffin tin, place the cupcake cases inside — for this recipe I chose white ones.

Fill your cases 3/4 full with the muffin batter.
Bake for 10 minutes at 180°C fan setting.

And there you have it — the mini muffins are ready to enjoy!
They can be eaten warm or cold.

They keep for 1 to 2 days in an airtight container.
