Mini Easter Cookies

Easter is just around the corner and it's the perfect opportunity to get your hands in the dough with an activity that's as delicious as it is creative.
These mini crunchy cookies in the shape of eggs and rabbits covered in pastel-coloured Déco Melts are perfect for gifting or for beautifully decorating your Easter table.
Here is the recipe to make these mini Easter cookies.

Let's get started with the recipe!
Start by making the cookie dough.
Once it's ready, roll it out using a large rolling pin and 3 mm cookie sticks.
Place the dough in the freezer for about 10 minutes. After this time, you will be able to cut out the dough using cookie cutters.
We chose to use the rabbit and the egg, which are found in the set of 6 Easter cookie cutters.
Cut out your cookies and place them on a perforated baking tray lined with a perforated mat to ensure even baking. :-)
Then place your cookies in the freezer for 10 minutes before baking them.
Preheat your oven to 135°C, fan-assisted.
After 10 minutes in the freezer, bake your cookies for 25 minutes in the middle of the preheated oven.
Once baked, let them cool to room temperature before decorating them.
Decoration
For this recipe, it's all about pastel colours! :-) In a bowl, mix the natural white Déco Melts with one of the colours. We used 3 times more white than colour to achieve pastel tones.
Melt the Déco Melts mixture in the microwave at 600Watt for one minute. Mix well and repeat this step until they are completely melted.
There you go, the melts are melted and ready to use. :-)
Cover the top of your cookie by dipping it into the mixture and give it a gentle shake to get a nice smooth surface.
Before the coating dries, sprinkle the little eggs with pastel nonpareils and add a "white Mimosa" sugar pearl on the rabbits as a tail.
Let them dry completely, and there you have it! Beautiful Easter cookies in spring colours. :-)
Stored in a cookie tin at room temperature, they stay fresh for up to 2 weeks.
