Mini cuchaules
Hello food lovers,
This week I'm sharing a recipe from our region.
Mini cuchaules, a saffron brioche traditionally made for the Bénichon festival.
To make 12 mini cuchaules, you will need:
- 500gr of plain flour
- 250gr of milk
- 50gr of butter
- 60gr of sugar
- 1 tsp of honey
- 1/2 tsp of salt
- 20gr of fresh yeast
- 1/2 tsp of saffron threads (half a box)
- 2 Silikomart burger moulds
- 1 egg yolk
To start, heat 250gr of milk and 1/2 tsp of saffron in the microwave at 600 watts for 30 sec.
Leave the mixture at room temperature for about 15 minutes so the saffron can infuse into the milk.
In the bowl of a stand mixer, pour 500gr of flour, 60gr of sugar, 1 tsp of honey and 20gr of fresh yeast, crumbled.
Your milk/saffron mixture should have turned a nice yellow colour. Pour it into the mixer bowl.
Using the dough hook, knead your dough for 2 minutes at speed 1.
After 2 minutes, add 60gr of butter and continue kneading for about 3 minutes, still at speed 1.
Then add 1/2 tsp of salt and knead again for 5 minutes at speed 1.
After those 5 minutes, continue kneading, but this time at speed 2 for 5 minutes.
At the end of the kneading, your dough will be nice and smooth.
Shape into a ball in your bowl and leave to rise for 1h30 at room temperature under a damp cloth.
After 1h30 your dough will have doubled in size.
Knock back the dough by giving it 3-4 punches.
If your dough is sticky, you can lightly flour your work surface.
Weigh small dough portions of about 75gr using a scale.
To divide the portions, I use a plastic dough scraper. You should be able to make 12.
To ensure the mini cuchaules bake evenly, I use the Silikomart burger mould.
For this recipe you will need 2 moulds. Place your moulds on a perforated baking tray.
Shape your dough portions into nice round, even balls, always tucking any imperfections underneath.
Then place them into the cavities of your moulds.
Once your 12 little cuchaules are ready, cover them with a damp cloth.
Leave them to rise for 1h at room temperature.
Preheat your oven to 200°C fan-assisted.
After 1h your little cuchaules will have grown in size.
Brush them with an egg yolk.
Score your cuchaules down the middle using a scoring knife.
Bake them at 200°C fan-assisted, in the middle of your oven for about 15 minutes.
Let them cool for a moment before turning them out of the moulds.
Here's the result — now all that's left is to enjoy them!
A little Fribourg favourite — enjoy them with Bénichon mustard.

Nous ne vous recommandons pas de mettre un cube complet. En revanche, si vous ne souhaitez pas qu'il vous reste un demi-cube de levure, vous pouvez doubler la recette. Les cuchaules, une fois cuites, peuvent être congelées sans souci. Il suffit de les emballer dans des sacs de congélation. Belle journée :-)
