Healthy Cookies
Hey there, food lovers!
How about this week I share a healthy recipe with you? No sugar, no dairy or gluten... But a recipe that is ultra indulgent nonetheless. Because healthy doesn't mean tasteless. ;o)
So here are my banana-peanut cookies.
The recipe is super simple and quick to make, and these cookies will be perfect for a snack break or your morning snack. ;o)
Here is the recipe to make 10 cookies.
Ingredients:
- 120gr pitted dates
- 20gr unsalted peanuts
- 1 banana
- 70gr peanut butter
- 10gr honey
- 75gr almond flour
- 55gr oat flakes
Start by roughly chopping 120gr of pitted dates.

In a food processor or blender, blend the dates with 20gr of unsalted peanuts for 1 minute.
Then add a sliced banana and blend the mixture again for a few seconds.

Continue by adding 10gr of honey and 70gr of peanut butter.
I used 100% peanut butter but any peanut butter will do.
Blend the mixture again for a few seconds, then pour the batter into a bowl. I thought I could blend everything in my food processor but it struggled when I added the almond flour... So I preferred to continue with the Kitchenaid. ;o)
Add 75gr of almond flour and 55gr of oat flakes and mix everything with the K beater.

Preheat your oven to 175°C, fan-assisted.
Form a ball using a dough scraper and use a perforated baking tray with a perforated mat.
Then weigh out balls of about 40gr. This will give you 10 cookies.

Shape them into nice balls and flatten them to get nice cookies.
The cookies won't flatten much during baking so don't hesitate to make them quite flat.
Then bake your cookies in your preheated oven at 175°C for 15 minutes.

Once nicely golden, remove them from the oven and let them cool directly on the tray.
And there you have 10 cookies you can enjoy guilt-free! ;o)
My daughter loved them, my son a little less so as the banana flavour is quite strong.
Personally I'm a fan! I'm going to make another batch right away because I love having energy bites that are this indulgent.
