Healthy Bar
Hey foodies!
Here is an ultra-indulgent snack that will be perfect for your children's break time, but also for your little hunger pangs throughout the day.

This recipe will give you approximately 30 cereal bars:
- 145gr of almonds
- 100gr of pistachios
- 70gr of cashews
- 30gr of puffed spelt (Smacks)
- 30gr of sunflower seeds
- 30gr of puffed quinoa
- 45gr of oat flakes
- 15gr of chia seeds
- 170gr of honey
- 100gr of maple syrup
- 1/4 teaspoon of salt
- 1 tsp of vanilla flavouring
Start by preheating your oven to 150°C, fan-assisted.
Then grab a perforated baking tray and a perforated mat.
Pour 145gr of almonds, 100gr of pistachios and 70gr of cashews onto your perforated tray lined with your perforated mat.
Bake your nuts for 15 minutes in your oven preheated to 150°C. This way the flavour of the nuts will come out and your cereal bars will be ultra crunchy and delicious. ;o)
Meanwhile, in a large bowl, pour 30gr of puffed spelt (or Smacks), 30gr of sunflower seeds, 30gr of puffed quinoa (found at Migros, brand Alnatura), 45gr of oat flakes and 15gr of chia seeds.
Mix with a spoon.
Once the nuts are toasted, let them cool for 10 minutes, then add them to your seeds and cereals.
Then mix well with a spoon and set aside.
Keep your oven on at 150°C, fan-assisted. ;o)
In a saucepan, pour 170gr of honey, 100gr of maple syrup, 1/4 teaspoon of salt and 1 tsp of vanilla flavouring.
The vanilla flavouring will give your cereal bars a little extra touch and the salt a moreish taste. ;o)
Use the honey of your choice, dark if you want a strong flavour or light if you don't want it to be too noticeable.
Heat the mixture to 120°C. You will need to use a standard thermometer as an infrared one does not give the exact temperature due to the large bubbles formed by the mixture...
Once 120°C is reached, quickly pour the syrup over your seeds and cereals, mix everything together with a spoon.
For the next step you will need a perforated tray, a silicone mat and an adjustable frame. ;o)
Grease your mould and your mat with coconut oil or butter.
Pour your mixture onto the mat.
Then place a sheet of baking paper on top and spread everything out using a small rolling pin.
Set your frame to approximately 24x32 cm so that your cereal bars are thick enough but not too much either.
Once everything is well spread out, remove the baking paper and place your tray in your oven preheated to 150°C for 20 minutes.
After 20 minutes of baking, remove your tray from the oven and let it cool for a good 10 minutes.
Then remove the adjustable frame and flip your cereal slab onto a cutting board.
Cut cereal bars to the size of your choice. ;o)
But don't wait too long, as once fully cooled they are harder to cut.
And there you have it, cereal bars ready to be enjoyed.
Store your bars in a metal tin. Remember to place a little baking paper at the bottom of your tin so they don't stick.
I hope you will try this new recipe. ;o)
Have a great Sunday foodies!
