Halloween Donuts
Hey foodies!
Halloween is just around the corner and so are the school holidays! :o)
Here's a great idea for a baking workshop with your little ones!
This morning I'm sharing mini donuts for Halloween.

These little bites will delight kids and adults alike! :o)
So here are the ingredients to make 30 mini donuts:
- 30gr butter
- 25gr coconut oil
- 75gr brown sugar
- 1/2 tsp salt
- 1 egg
- 1 tsp vanilla flavouring
- 115gr milk
- 2.5gr baking powder
- 0.5gr baking soda
- 160gr flour
- 1 jar of fondant icing
- Gel food colouring
- Glitter and Halloween decorations
The recipe is super simple! I used the Silikomart mini donut mould which is absolutely fantastic!
Also, I made the donuts with coconut oil but you can replace the coconut oil with rapeseed oil if you prefer. :o)
Start by pouring 30gr of butter and 25gr of coconut oil into a large bowl.

Add 75gr of brown sugar and 1/2 tsp of salt to the bowl.
Whisk everything together for about 2 minutes.

Then add 1 egg, 1 tsp of vanilla flavouring and 115gr of milk and whisk again for 1 minute.
I used vanilla flavouring but you can easily choose another flavour if you like (coffee, caramel, red fruits...etc).

Finish by adding 2.5gr of baking powder, 0.5gr of baking soda and 160gr of flour.
To weigh the baking powder and baking soda, I used my precision spoon to make sure I didn't add too much or too little... Super handy! :o)
Mix everything together again with a whisk for a good 2 minutes.

In the meantime, prepare the following tools:
- A 40 cm piping bag
- A jug
- A perforated baking tray
- A dough scraper
- A mini donut mould
- A release spray
- A spatula
Preheat your oven to 200°C fan-forced.
Place your mould on a perforated baking tray before filling (it will be much easier to carry afterwards).

Place the piping bag in the jug, then pour your donut batter into it.
Use a dough scraper to push the batter down to the bottom of your piping bag.

Spray your mould with the release spray. This way, your donuts won't stick to the mould once baked.
Then fill your cavities with donut batter about halfway. The recipe will give you enough for two batches of mini donuts.

Once all the cavities are filled, tap your perforated tray 1-2 times on your work surface so the batter levels out on top of the donuts.
Then bake for 8-10 minutes at 200°C, fan-forced.
Once the donuts are baked, turn your mould upside down onto a cooling rack to unmould them.

Let them cool for a few minutes.
You can go ahead and bake your second batch straight away. No need to let the mould cool down. Just remember to re-spray your mould. :o)

Time to decorate! :o)
I went all in on the Halloween theme but feel free to change it up as you like! Princess, unicorn or even knight!
For my glaze, I used fondant icing (just like for éclairs).

I always use white fondant that I colour with gel food colouring.
Here, I used Progel gel colourings which work amazingly well for Halloween! :o) I used orange, green and purple.

To get a smooth glaze you need to heat it for 5 to 10 seconds in the microwave at 600Watt (or in a bain-marie).
Add your gel colouring, then mix. If needed, add 1/2 tsp of water to thin out your glaze. Be careful not to add too much water! Otherwise your glaze will run and won't hold.

Once the glaze is ready, simply dip your donuts in it, let them drip for 5 seconds and then turn them over.
If your glaze hardens, it means it's too cold. Reheat it for 5 seconds and you're good to go! :o)

Then sprinkle with glitter, candy eyes or any other decorations of your choice! :o)
Note that decorations must be placed while the glaze is still fresh... It dries fairly quickly and your decorations won't stick anymore.
I recommend using one glaze colour for several donuts in a row, because if you change colour each time, your glazes dry very quickly and you'll constantly have to reheat them.

Ta-da! Here are my mini Halloween donuts! :o)
I hope you enjoy this recipe. My kids loved decorating and eating them.
You can even prepare these donuts in advance, they will keep for 1-2 days in a metal tin.
