
Ghost madeleines
More sweet than scary: little ghosts from the madeleine mould

Halloween doesn't always have to be scary. Our little ghost madeleines are more for cuddling than for frightening, and underneath hides a moist madeleine with chocolate drops.
The trick is really simple: the baked madeleines go back into the clean silicone mold, into which white Cake icing has first been piped. That way each madeleine gets a smooth, glossy icing coat that traces exactly the typical shell shape.
Then comes the nicest part: faces, little arms, hearts and flower wreaths. We worked with black and pink Cake icing, Fondant and Sugar decoration, but you can decorate your ghosts however you like.

Step by step
Madeleine batter
Whisk up egg and sugar
Whisk 80 g whole egg with 65 g sugar until fluffy in the stand mixer using the whisk. Add 30 g whole milk and 20 g honey and mix everything well.


Dry ingredients, butter and chocolate drops
Mix 100 g flour, 1 tsp Baking powder, 1 pinch of salt and 1 pinch of vanilla into the mixture and stir thoroughly.
Let 100 g of melted butter run slowly into the batter while you keep stirring. Finally, fold in 50 g baking-stable chocolate drops.



Chill the batter
Put the batter in the fridge for about 30 minutes. Because of the melted butter it is very soft at first. Once chilled it firms up and can be piped much more cleanly into the molds.
Baking
Prepare and fill the molds
Preheat the oven to 160 °C fan. Place the silicone molds on the baking tray and spray them evenly with non-stick spray.
Fill the chilled batter into a piping bag and pipe it into the cavities: about 24 g per large madeleine (220 g for 9 pieces) and about 7 g per small one (110 g for 15 pieces).



Bake and release
Bake the large madeleines for 10 minutes and the small ones for 8 minutes at 160 °C fan. Let them cool briefly, lay out a sheet of baking paper and gently bend the silicone mold backwards: this way the madeleines release all by themselves.


Icing coating
Wash and dry the mold
Wash the silicone mold thoroughly and dry it very well. Not a single drop of water may remain, otherwise the icing will become blotchy.
Pipe in the icing and set the madeleines back in
Melt the white cake icing in short intervals in the microwave, fill it into a piping bag and pipe each cavity about one third full.
Press the madeleines with the shell side down into the icing until it rises up at the edges.



Let it set
Place the mold in the fridge for a few minutes. As soon as the icing is set, bend the mold back and release the ghosts.
Decorating
Draw on the faces
Fill black Cake icing into a cornet and draw on eyes and mouths. Whether round googly eyes, heart eyes, spirals or a wink, every ghost can get its own character.



Pink cheeks
With pink Cake icing, add two small dots under the eyes. That instantly makes the ghosts adorable.

Little arms and horns
Roll small pieces of Fondant into teardrops in the palm of your hand and bend them slightly, creating little arms or small horns. With a dab of icing they stick nicely.



Bats and hearts
Roll out coloured Fondant thinly and press it into the silicone embossing mould. Carefully release the figures and attach them with a little icing: as wings, as a hair ornament or as a heart in the arms.



Flower wreaths and Sugar decoration
Pick up the sugar flowers with a Cooking tweezer or a toothpick, dab a little icing on the back and set them as a small wreath on the head. Purple sugar sprinkles and small sugar figures are attached the same way. Let everything set briefly, and your band of ghost madeleines is ready.

- Dough: Whisk egg and sugar, stir in milk, honey, flour, baking powder, salt and vanilla, then add the melted butter and chocolate drops.
- Chill: Place the dough in the fridge for approx. 30 min.
- Fill: Spray the moulds with release spray; approx. 24 g for large, approx. 7 g for small per madeleine.
- Bake: 160 °C fan: large 10 min, small 8 min.
- Icing: Dry the mould thoroughly, pipe in ⅓ white cake icing, press the madeleines back in, let set in the fridge.
- Decorate: Faces with black and pink icing, details made of fondant, sugar flowers and sugar decoration.

So they turn out perfectly every time
Even a tiny drop of water leaves marks in the icing. Better to dry it once more.
A third is enough. With more, the icing runs over the edge and the Madeleine gets a thick collar.
Cold batter is easier to dose precisely, and the Madeleines develop their typical little belly.
Shape the little arms, bats and hearts before you start on the faces. That way you decorate each ghost in one go, while the icing is still soft enough to stick.
Frequently asked questions
Yes. Keep them in an airtight tin and give them their icing coat only the next day.
You can also bake the Madeleines in a metal tin. For the icing coat, however, you need a Silicone mold, because only from it can the iced Madeleines be released cleanly.
White chocolate would need to be tempered, otherwise it won't set nicely and won't shine. Cake icing is much simpler for this.
