Roast the walnuts
Spread the walnuts on a Baking tray lined with baking paper and roast them in the preheated oven at 170 °C fan for about 8 minutes. Then let the walnuts cool completely before roughly chopping them. The pieces can be different sizes – this gives a lovely texture in the ice cream later on.

Prepare the caramel base
Put the sweetened condensed milk into a large Bowl and add the salted Caramel cream. Mix both ingredients thoroughly with a Whisk until you have a smooth, even cream.



Fold in the cream and work in the walnuts
Whip the full cream stiff with the stand mixer. Then gently fold it into the Caramel cream in three portions using a Rubber scraper. Work carefully so that the airiness of the whipped cream is retained and your ice cream turns out nicely creamy later on.
Add the roasted and chopped walnuts to the mixture and gently fold them in too, until they are evenly distributed.



Fill and decorate the ice cream
Transfer the finished ice cream mixture into a suitable container, for example a ceramic casserole dish or a Tupperware, and smooth the surface. For an extra caramel aroma and a lovely look, you can draw a pattern on the surface with the remaining Caramel cream – ideally with a wooden stick or the back of a spoon. Finally, decorate the ice cream with chopped walnuts and a few Caramel cubes.



Freeze
Place the ice cream in the freezer for at least 4 hours, ideally overnight, until firm. Take it out shortly before serving so that it is easier to portion.
