Caramel Popcorn
Happy New Year, foodies!
I hope you all celebrated the New Year well and are ready to bake even more this year! :o)
This morning I have a tutorial that will be perfect for a movie night at home! Caramel popcorn! So incredibly good!
This recipe comes straight from the United States... Well yes, once again a recipe from my travels! :o) Travel and baking are my whole life!

Here are the ingredients you'll need:
- 150g unsalted popcorn kernels
- 200g sugar
- 115g butter
- 160g glucose syrup
- 1/2 teaspoon salt
- 2 tsp vanilla extract
- 1.5g baking soda
Let's go!
Start by preheating your oven to 120°C, fan-assisted.
Then pop your 150g of popcorn plain. Here I used popcorn kernels that I popped in my popcorn machine.
Place a large baking tray underneath. Here I used a dish of about 40 cm x 30 cm and nothing smaller will do!
Once the popcorn is popped, keep it warm in the oven at 120°C while you make the caramel.

Grab a small saucepan and pour in 200g sugar, 115g butter, 160g glucose syrup and 1/2 teaspoon of salt.

Heat and stir until boiling. Then let it boil for 5 minutes. You can slightly lower the temperature but it should still be boiling. The caramel will thicken slightly and take on a little colour.
Then add 2 tsp vanilla extract and 1.5g baking soda.

The vanilla adds a little extra flavour and the baking soda will puff up the caramel and aerate it.
Stir for another 2 minutes or so.
Once the 2 minutes are up, pour the caramel over the popcorn and toss with two spatulas to coat the popcorn well with the caramel.
Then place the dish in the oven, still at 120°C for 15 minutes.

After 15 minutes of baking, remove the dish from the oven and toss again to mix the caramel well.
Put it back in the oven for another 15 minutes... It's ready!
So to recap, bake the caramel popcorn for 30 minutes in total, and toss every 15 minutes so the caramel is evenly distributed.
While the popcorn is still warm, spread it out on a sheet of baking paper and let it cool to avoid large clumps of popcorn ;0)
With this quantity, I had to reheat the tray once more to be able to separate all the popcorn. So don't worry if you need to put it back in the oven too.

I promise you, it's absolutely amazing! So good! Our guests ate every last bit!
I served the popcorn in popcorn boxes, just like at the cinema. ;0)
