Caramel-chocolate cookies

A cookie recipe that hides an ultra indulgent surprise, does that tempt you?
A cookie base made of only 3 ingredients: applesauce, almond flour and a touch of vanilla.
And for the surprise, a caramel sauce topped with a chocolate ganache! ;-)

To make 11 cookies in the tart cookie mold, you will need:
- 145gr almond flour
- 90gr applesauce
- 1 tsp vanilla flavour
Let's get started with the recipe!
Start by preheating your oven to 180°C, fan-assisted.
In a large bowl, pour 145gr almond flour, 90gr applesauce and 1 tsp vanilla flavour. Mix well to form a smooth, homogeneous dough. The dough will remain a little sticky, that's normal.
Take the silicone tart cookie mold and fill it with the cookie mixture.
Place the mold on a baking tray and bake the cookies for 12 minutes in the middle of the preheated oven.
As soon as the cookies are baked, unmold them carefully and let them cool down.
Once cooled, fill the cookies with caramel topping and place them in the freezer for 15 minutes so the caramel sets.
Then, melt the chocolate ganache in the microwave at 340Watt for 1 minute.
Mix well and transfer it into a piping bag.
Cover the caramel with chocolate ganache and place the cookies in the fridge so it sets.
And there you have it, easy and quick cookies to make.
They will keep for 2 weeks in the fridge in a well-sealed container.
