Blueberry-Lime Financiers
Hey foodies!
This week I have a simple but utterly indulgent recipe for you.
Blueberry season in Switzerland arrives all of a sudden, and it's the perfect opportunity for us to make little blueberry financiers paired with lime.

Here is the recipe to make 12 mini financiers:
- 85g butter
- 1 lime
- 4 egg whites
- 100g sugar
- 140g almond flour
- 40g flour
- 100g blueberries
Let's get started with the recipe!
Start by melting 85g of butter in the microwave at 600 Watt for 30 seconds.

Zest one lime using a microplane grater.
Then squeeze the juice from the lime. We need 20g of lime juice.
Mix the butter well with the zest and juice. Set aside.

Separate the whites from the yolks of 4 eggs.
We won't need the yolks for this recipe. You can keep them to make a pastry cream or a Breton shortbread. :o)
In a large bowl, pour the egg whites with 100g of sugar.
Whisk the mixture to obtain a beautifully whipped meringue, then remove the whisk.

Then add 140g of almond flour and mix for 10 seconds using the flat beater (K beater) this time.
It's fine if the mixture isn't 100% homogeneous.

Then sift 40g of flour and mix again for 10 seconds with the flat beater.

Preheat the oven to 180°C, fan-assisted.
Finally add the lime butter and gently fold everything together with a spatula.

Once the mixture is well combined, transfer it into a 40 cm piping bag.
Use a pitcher to fill the piping bag neatly.

Get a perforated baking sheet and a mini financier mould.
Spray the mould with release spray to make it easier to unmould the financiers.

Pour the financier batter into each cavity then place 4-5 blueberries per cavity (90-100g in total).
Gently press the blueberries into the batter so they don't pop out during baking.
Bake your financiers in the preheated oven at 180°C, fan-assisted for about 25 minutes.
Once the financiers are baked, remove them from the oven and let them cool in the mould.
Unmould them once cooled.
They will keep for 2 to 3 days in a well-sealed container.
