Cake glaze mirror: how to make your dessert shine like a mirror
White chocolate, glucose syrup and condensed milk for the perfect shine
Hello food lovers,
there is probably nothing that triggers as many "wows" as a dessert with a cake glaze mirror finish. This smooth, glossy surface, in which you can almost see your reflection, looks like it came from a patisserie, and with our recipe you can achieve it at home too!
The most important thing first: a mirror icing only adheres to a frozen dessert. Only the contact between the ice-cold surface and the icing at around 30 °C allows it to adhere perfectly. You will also absolutely need a Thermometer, which is a must here.
We show you step by step how it's done, with a beautiful burgundy colour and a touch of Glitter.

Ingredients
For the chocolate
Step by Step
Prepare the icing
Let the gelatine bloom
Pour 50 g cold water into a bowl, weigh 10 g Gelatinepulver with the spoon scale and sprinkle it over the water. Stir briefly and let it bloom for 10 minutes. Powdered gelatine gives a much smoother texture than leaf gelatine, which is why we warmly recommend it.

Prepare the chocolate, colour and glitter
Put 150 g white chocolate with a little gel color and, if you like, glitter powder into a tall measuring cup. We chose Bordeaux and the «Ruby» glitter for a touch of bling. Only use gel or powder colors, as liquid colors change the consistency.

Cook the syrup to 103 °C
Put 150 g sugar, 150 g Glucose syrup and 75 g water into a pot, stir briefly and heat everything to exactly 103 °C. Once the temperature is reached, remove the pot from the heat immediately.

Pour everything together
Pour the bloomed gelatine and then the hot syrup over the chocolate. Let everything stand for a few seconds, then stir with the dough scraper. Finally, fold in 100 g sweetened condensed milk. Important: only use sweetened condensed milk, as unsweetened is too thin.

Mixing without air bubbles
Mix the icing for 1 to 2 minutes with a hand blender in the tall measuring cup. Hold the blender at an angle and right at the bottom, and don't move it up and down, or you'll pull air bubbles in. Better to mix a little longer, then the texture will be perfect.

Let it cool to 30 to 32 °C
Cover the icing directly on the surface with cling film and let it cool to 30 to 32 °C at room temperature, which takes 30 to 60 minutes depending on your kitchen. Please don't put it in the fridge! Once the temperature is reached, mix again for 20 to 30 seconds. It is now ready, and you can use it between 29 and 32 °C.

Glazing
Glazing the frozen dessert
Place a cake rack over a drip tray, release the frozen dessert from its mould and set it on the rack. Pour the icing generously over it and make sure every spot is covered. Better to go over the same spot twice! It's even easier with two people: one glazes while the other calls out where icing is still missing.

Letting it drip and transferring
If your dessert is larger than the cake rack, place it on a bowl or a large glass. Let the icing drip off for at least 3 minutes before you move the dessert, otherwise it will run onto the cake board. Then lift it carefully into place with one or two large angled spreading palettes.

This is how it is guaranteed to work
Die icing haftet nur, wenn sie auf eine eiskalte Oberfläche trifft. Auf einem gekühlten oder zimmerwarmen Dessert läuft sie einfach ab. This is the perfect base for a cake mirror glaze.
An open immersion blender with the blade held at an angle and kept still draws in hardly any air into the icing. This way you get a surface without bubbles.
You can collect the icing that drips off from the bowl and reuse it within seven days.
Frequently asked questions
Usually the mixer was moved or not held deep enough. Keep it right at the bottom of the measuring cup and do not move it. You can pop individual bubbles with a toothpick before glazing.
It works, but gelatine powder makes the icing smoother and less rubbery. We therefore recommend powder with 200 Bloom.
This is almost always due to temperature. Above 32 °C it is too runny and will not coat properly, below 29 °C it becomes too thick. Use the Thermometer to hit the right moment.

Question de Carine
By: Carine B. On 2025-03-27Bonjour,
