With chocolate combs and decorating spatulas you can turn tempered chocolate into stripes, waves, curls, leaves and feathers, just like the cakes and desserts in a patisserie. The range includes chocolate combs 1 and 2 (fine), 3 and 4 (medium and large) and 5 and 6 (short and long spacing), the tree bark pattern comb, comb scraper sets with wavy, straight and serrated edges, the 3-in-1 wave decorating scraper, a 5-piece decorating spatula set, a rigid metal horn and chocolate spatulas in leaf, feather and narrow leaf shapes.

Stripes and waves on acetate

  • Spread a thin layer of tempered chocolate on an acetate sheet.
  • Draw the comb through the chocolate in one smooth movement to create fine lines.
  • Let it set slightly, then wrap the sheet around a cake ring or roll it into a tube to make rings, spirals and curls.
  • Peel off the sheet once the chocolate has crystallised.

The numbers on the combs stand for different line widths and spacings. With the wave scraper or the serrated edges, you can also draw patterns directly into buttercream or ganache on the side of a cake.

Tree bark, leaves and feathers

The tree bark comb creates the typical bark texture in the cream of a Bûche de Noël or yule log. For leaves and feathers, dip the tip of a chocolate spatula into tempered chocolate, place it on a sheet and pull it away with gentle pressure. With the metal horn you scrape set chocolate into curls and fans.

Frequently asked questions about chocolate combs and decorating spatulas

Why does my decoration break when I peel it off?

Usually the chocolate was not properly tempered or the layer was too thin. Check the temperature with a thermometer.

Can I use the combs for creams as well?

Yes, comb scrapers and decorating scrapers also work with buttercream, ganache and icing on the side of a cake.

When should I peel off the sheet?

Only once the chocolate has fully crystallised, ideally after a few hours at cool room temperature.

It all starts with well-tempered couverture, checked with a chocolate thermometer. Colourful patterns are easy with transfer sheets, and our palette knives are ideal for smoothing.
