What is it suitable for? The metal horn reliably removes couverture from hollow molds, marble or granite slabs and other smooth surfaces and ensures clean edges. How is it used? Melt the couverture to 45 °C, spread half of it on the cool plate with the angled spatula, gather the mixture with the horn in the middle and repeat this until it thickens; then mix with the remaining couverture. For praline molds, rinse, dry and polish the molds, apply optional melted cocoa butter color, brush the cavities thinly with tempered couverture, fill the mold, release air bubbles by tapping, pour off excess chocolate and clean the edges; chill, fill with ganache, seal and peel off evenly. When frosting cakes, the sturdy stainless steel edges make smoothing easier: Hold the tool vertically for the sides and horizontally for the surface, ideal in combination with a rotating cake plate. As a pastry cutter, the robust, stainless steel blade is particularly suitable for cutting and portioning bread, biscuit or cake dough and can also be used for pizza.
