Vanilla pretzels that smell like childhood
Tender butter dough, real vanilla and an icing that shines
Hello fellow food lovers,
there are cookies that simply smell like childhood. For us, those are vanilla pretzels: tender butter dough, plenty of real vanilla and a thin, glossy sugar icing that gives a faint crunch when you bite into it. The moment the tin is on the table, it's already half empty!
The best part of this recipe: it's really simple. You only need five ingredients for the dough, two for the icing and a pretzel cookie cutter. We'll reveal the one small secret right away: the pretzels go into the icing while they are still lukewarm. That's the only way the icing becomes wonderfully thin and shines so beautifully.
This quantity makes around 30 vanilla pretzels. Perfect for your own cookie tin or, nicely packaged, as a small gift. Enjoy baking!

Step by step
The vanilla dough
Butter, sugar and egg
Put the soft butter and the sugar into a bowl and beat both with the hand mixer until nice and fluffy. This takes a good one to two minutes, until the mixture is light and creamy. Then pour in the beaten egg and mix it in well.

Vanilla and flour
Now the aroma comes into play! Add the vanilla pod seeds and the flour and mix everything only briefly. Don't worry if the dough still looks crumbly at this stage, that's how it should be.

Knead and into the fridge
Knead the crumbs together with your hands into a smooth dough. Shape it into a flat block, wrap it in cling film and let it rest in the fridge for about an hour. Cold, it is much easier to roll out, and the pretzels keep their shape in the oven.

Rolling out and cutting out
Roll out evenly
Preheat the oven to 180 °C fan-assisted. Knead the cold dough briefly, dust the work surface with a little flour and roll the dough out to 5 mm thick. Our tip: place two strips or rolling pins on either side of the dough. This way the dough is the same thickness everywhere and all the pretzels are ready at the same time.

Cut out the pretzels
Now it gets pretty! Cut out the pretzels as close together as possible. Use the ejector on the cookie cutter to press each pretzel out easily, without it breaking. Place them on a tray lined with baking paper. Knead the dough scraps together again and keep cutting until nothing is left.

Baking and glazing
Baking and mixing the icing
Bake the vanilla pretzels for 10 to 12 minutes. They should be firm but still nicely light in colour. While they are in the oven, stir icing sugar and water with the whisk to a runny icing. It is perfect when it coats the back of a spoon evenly.

Warm into the icing bath
This is the most important moment! Let the pretzels cool only very briefly after baking. While they are still lukewarm, dip them upside down into the icing one after another, let them drip briefly and place them on a Cake rack.

Let dry and enjoy
Let the vanilla pretzels dry completely on the Cake rack. Place baking paper under the rack to catch the drips, so your kitchen stays clean. As soon as the icing is set, you may taste them!

Lovely with it
Not necessary for the recipe, but it goes well.

So it's guaranteed to turn out
Dip the pretzels while they are still warm. Then the icing spreads very thinly and dries with a glossy finish. On cold pretzels it stays thick and dull. That is why it is best to mix the icing while the pretzels are baking.
Do you have a whole vanilla pod at home? Slice it lengthwise and scrape out the seeds with the back of the knife. Half a pod is enough for this amount, and you can keep the empty pod in your sugar jar for fine vanilla sugar.
Vanilla pretzels are perfect for baking with children. Cutting out and dipping them is especially fun for little ones. Just let the pretzels cool beforehand until small fingers can hold them comfortably.
Frequently asked questions
Most likely the pretzels were already too cold when you dipped them. The icing needs the warmth of the baked goods to spread thinly and shine. So let them cool only briefly right after baking, and then get going!
Then it has become too warm. Put it back in the fridge for 15 minutes and dust the work surface with a little flour. After that it will roll out again very easily.
Of course! Wrapped in cling film, it keeps for two to three days in the fridge. You can also freeze it and let it thaw overnight in the fridge.
