Tiramisu Yule Log
Hey foodies!
I really wanted to share a new Christmas yule log recipe with you this year, but the timing was really tight! Despite everything, I managed it! :o)
This time, I'm bringing you a tiramisu yule log. A dessert aimed a little more at adults, but at our place the kids enjoy it too, since the coffee flavour is very mild.

For this recipe, serving approximately 8-10 people, you will need:
- 2 eggs (55g each)
- 55g sugar
- 1 tsp cappuccino flavouring
- 55g flour
- 15g icing sugar
- 2 gelatine leaves
- 20g egg yolk (1 egg yolk)
- 10g sugar
- 2 tsp cappuccino flavouring
- 100g milk
- 75g full-fat cream
- 20g egg yolk
- 10g sugar
- 50g dark chocolate
- 50g milk
- 50g full-fat cream
- 1 tsp cappuccino flavouring
- 2 gelatine leaves (i.e. 3.33g)
- 100g full-fat cream
- 50g white chocolate
- 2 tsp tiramisu flavouring
- 30g icing sugar
- 100g mascarpone
- 200g full-fat cream
- Brown velvet spray
- Gold leaf
- Cake toppers
We'll start by making our sponge. That way, it will have cooled down by the time we need it.
Ladyfinger sponge
Start by preheating your oven to 180°C, fan setting.
Then separate the yolks from the whites of the 2 eggs.
Next, in a bowl, pour the 2 egg whites and 55g of sugar.
Whisk the ingredients together to obtain a nice meringue.

Pour 1 teaspoon of cappuccino flavouring into the 2 egg yolks, then mix.
I opt for this flavouring because it is milder than pure coffee and will therefore appeal to more people. :o) Plus, it is very easy to use.

Pour the egg yolk and flavouring mixture into your meringue, then gently fold together using a rubber spatula.

Finally, sift 55g of flour into the batter.
Once the flour is sifted in, fold everything together with the spatula as gently as possible. Set the batter aside for a few minutes.

Prepare a perforated baking tray, a silicone mat and an adjustable frame. Set the frame to its smallest size (19 x 28 cm).
This equipment will give you perfect baking results! :o) Personally, I only work with these.
Spray your mat and frame with a release spray, then pour your sponge batter into the frame.

Use an offset spatula to get an even layer of sponge batter.
Once the batter is spread evenly, dust the sponge with 15g of icing sugar.
Bake for 10 minutes in your preheated oven at 180°C fan.

Once your sponge is baked, let it cool for 10-15 minutes. Then run a knife all around the frame so the sponge doesn't tear when you remove it.

Cut your sponge into two rectangles according to the templates.
We will use the small cut for the insert and the large one to close our yule log. :o) Set the sponge aside while you make the rest of the log.
If you are making your yule log over several days, you can either keep the large piece in an airtight container or freeze it wrapped in cling film.

Now let's move on to the coffee cremeux. :-)
Coffee cremeux
Place 2 gelatine leaves in very cold water and let them soften for a good 5 minutes.

In a bowl, pour 1 egg yolk and 10g of sugar.
Lightly whisk the egg yolk with the sugar until slightly pale.

Add 2 teaspoons of cappuccino flavouring and mix again.
Set the mixture aside.

In a saucepan, pour 100g of milk and 75g of full-fat cream and heat everything up.
When the mixture begins to steam, remove it from the heat.
Off the heat, add the egg/sugar/flavouring mixture and whisk vigorously.

Return the saucepan to the heat and heat the mixture to a maximum of 82-85°C, stirring constantly.
Use the thermometer whisk to reach the right temperature. Set it to the desired temperature and it will beep once reached.
Once the correct temperature is reached, immediately remove the saucepan from the heat.

Add the 2 softened gelatine leaves.
Whisk again for 1 minute, then pour the coffee cremeux into the insert mould.
I used the 22 cm yule log insert from Silikomart. :o)
I work almost exclusively with this brand, which is just amazing! As I always say: you need the right equipment to enjoy baking!
Place the insert in the freezer for 30 minutes.

In the meantime, prepare the chocolate cremeux.
Chocolate cremeux
In a bowl, pour 1 egg yolk (20g) with 10g of sugar and whisk until slightly pale.
Set the mixture aside.

Place 50g of dark chocolate in a glass bowl and melt it in the microwave or over a bain-marie.
In a saucepan, pour 50g of milk and 50g of cream.

Using measuring spoons, add 1 teaspoon of cappuccino flavouring.
Heat the milk/cream/flavouring mixture. When it starts to steam, remove it from the heat.

Off the heat, add the egg yolk/sugar mixture and whisk vigorously.
Return everything to a medium heat and heat to 82-85°C, stirring constantly.
For this type of preparation, I like to use the thermometer whisk, which lets you monitor the temperature and whisk at the same time. It will beep once the temperature is reached. :-)
Once the temperature is reached, immediately remove from the heat.

Pour the cremeux over the dark chocolate and gently whisk together.
The chocolate will melt slowly. Give it 1-2 minutes. :o)
You've probably noticed there's no gelatine this time... That's because the chocolate will play that role. It will slightly set our cremeux, so there's no need to add gelatine.

Remove your insert from the freezer.
Place the small sponge cut-out into the mould, pressing lightly onto the coffee cremeux. It won't have fully set yet, so be careful not to press too hard!
Pour the chocolate cremeux over the sponge. Smooth the cremeux as level as possible.
Finally, place your insert in the freezer for at least 3 to 4 hours minimum.
You can of course prepare the insert several days in advance. :o)

Last preparation: the mascarpone mousse.
Mascarpone mousse
Start by soaking 2 gelatine leaves in very cold water.

Also pour 100g of full-fat cream into a saucepan. Set it aside for now.
Place 50g of white chocolate in a glass bowl and melt it in the microwave or over a bain-marie.

Heat the cream (100g). When it comes to a boil, remove it from the heat and add the softened gelatine.
Whisk everything together.

Pour the cream/gelatine mixture over the melted chocolate and whisk together.
Add 2 teaspoons of tiramisu flavouring and mix again.
Set the mixture aside at room temperature. It needs to cool down before it can be incorporated into the rest. :o)

In a large bowl, pour 30g of icing sugar, 100g of mascarpone and 200g of full-fat cream.

Whip the mixture to obtain a nice whipped cream. It should be whipped but not too stiff.

Once the chocolate/cream/gelatine mixture is at 25°C-29°C maximum, fold in the whipped cream in 3 additions.
If the chocolate is too hot, it will melt your whipped cream and everything will become liquid... So be patient!
Gently fold with a whisk so that the two mixtures combine well.

For this yule log, I used the classic yule log mould from Silikomart with the coffee bean texture mat.
Please note that we have other textured mats available in our range.
I love this yule log mould because all our mats fit it. Depending on the flavour or style of my log, I just swap the mat. :o)
Fill your yule log mould with mascarpone cream to about 1/3.

Using a small offset spatula, spread the mousse up the sides of the mould. This will prevent air bubbles and ensure mousse coverage everywhere.
Unmould your frozen insert and place it in the centre of your yule log.

Pour the remaining mascarpone mousse over the insert. Smooth lightly with the offset spatula to ensure even coverage.
Finally, place your sponge (large cut-out) on top of the mousse and press gently.
Place your yule log in the freezer for a minimum of 5-6 h.
You can freeze your yule log for up to 3 weeks without any change in texture. So if you want to prepare Christmas in a relaxed way this year, this is the way to go! :o)

Decorations
Velvet sprays can sometimes be temperamental! Soak a brown velvet spray for about 10 minutes in lukewarm water (30°C). This will allow the cocoa butter in the bottle to become more fluid.
Place a sheet of baking paper on a turntable to avoid making a mess.

Unmould your yule log and place it on the turntable.

Place everything inside a tall box to avoid getting velvet spray all over the kitchen.
Shake your velvet spray well.
Spray your yule log from a distance of approximately 20 cm to achieve a fine, even finish.

Place your yule log on a log board or a pretty platter, then decorate it however you like! :o)
I went for a simple decoration by sprinkling gold leaf over the log.

Add a few chocolate coffee beans, and finally, stick some cake toppers into the log.

Defrost your yule log in the fridge for 6-8h before serving. You can easily defrost it in the fridge the day before.
Don't forget our yule log boxes, which are perfect for transporting it. :o)
I hope you enjoy this tutorial! We enjoyed eating it 2-3 times while testing and refining the recipe.

Oui vous pouvez sans autre faire cette recette dans le moule Spiral. Vous devrez juste modifier les quantités (divisé par 1.2 tous les ingrédients) car le moule est plus petit. Ca a vraiment un goût beaucoup trop prononcé de gélatine, ce n'est pas terrible, je me demande si une feuille aurait suffit vu le peu de préparation. J'espère qu'avec le biscuit et crémeux chocolat, le goût sera meilleur."
