Strawberry-Watermelon Ice Cream
Hey there, food lovers!
This morning, I'm sharing an ultra-refreshing ice cream recipe with you! A real treat when it's hot outside! :o)
Here are my little strawberry-watermelon ice creams.

Here is the list of ingredients:
- 100gr of water
- 55gr of sugar
- 35gr of dehydrated glucose
- 250gr of watermelon
- 100gr of strawberries
- 2 tsp of lemon juice
Let's get started with the recipe!
In a saucepan, bring 100gr of water to a boil.

Remove from the heat and add 55gr of sugar and 35gr of dehydrated glucose.
The dehydrated glucose will prevent the sorbet from melting too quickly and will help keep a creamier texture.

Let the sugars dissolve gently in the hot water. Stir occasionally with a whisk.

Then, in a tall jug, pour in 100gr of strawberries and 250gr of watermelon.

Add 2 tsp of lemon juice.
You probably already know this, but I always use this natural organic lemon juice (yellow or green). Note that this is not concentrate but real juice. :o)

Blend your fruits using a blender, then add the sugar syrup and blend again.
For this recipe, I used fresh fruit. If you want to make ice creams out of season, you can easily use frozen fruit.

Then pour the mixture into your ice cream maker and churn for 40-50 minutes.
Occasionally stop the machine and use a spatula to scrape the edges that have set faster than the center.

Get out 3 mini ice cream molds. Here, I used the mini Tango ice cream molds.
Once the ice cream is ready, spoon it into the ice cream molds.
The ice cream should be slightly set but not too much! Otherwise you won't be able to pour it properly into your molds.

Tap the mold lightly on the work surface so the ice cream spreads well into the edges and all the different shapes.
Place the sticks (make sure to use mini ice cream sticks!) in each mold and smooth the top of the mold well with an offset spatula.
Then place your molds in the freezer for a minimum of 2h.

And here is the result! Time to dig in! :o)
If you'd like to unmold your ice creams to reuse the molds, no problem! Simply unmold them and place them in a Tupperware-style container.
