Pesto Flowers

Who wants to spice up their appetizer?
Try these delicious parmesan shortbread cookies with a touch of pesto.
Perfect for a spring aperitif with friends! :-)

To make 10 cookies, follow the Gruyère shortbread step found in the salmon-shrimp terrine recipe.
Let's get started with the recipe!
To make these shortbread cookies, we simply replaced the Gruyère with parmesan.
Once the dough is ready, roll it out to 3 mm using a large rolling pin and cookie thickness bars.
Place it in the freezer for 10 minutes.
Preheat your oven to 180°C, fan setting.
Use the Mix and Match classic cookie cutter set. We went with flowers, but feel free to choose whichever cutter you prefer. ;-)
Cut out 10 whole flowers and 10 flowers with the center cut out.
Place them on a perforated baking sheet lined with a perforated mat to ensure even baking.
Bake for 10 to 12 minutes in the middle of the oven once preheated.
Once the cookies are baked, let them cool to room temperature before filling them.
For this recipe, we kept it simple by using a store-bought pesto.
Place a teaspoon of pesto in the center of your cookie and cover it with another cookie, this time with the center cut out.
I recommend filling them just before serving to keep the cookies nice and crispy. :-)

J'ai fait la recette du biscuit au parmesan, mais comme il n'y a pratiquement pas de liquide, je n'ai pas du tout une pâte travaillable... Je rajoute un peu d'eau et on verra bien.
