Peanut Cookies
Hey foodies!
Today, I'm sharing a peanut cookie recipe with you. :o) Perfect for an afternoon with the kids.
The recipe is simple and quick!

To make 14-16 cookies, you will need:
- 150gr of brown sugar (coarse grains are better)
- 115gr of softened butter
- 1/2 tsp of salt
- 50gr of peanut butter
- 1 egg
- 1 tsp of baking soda
- 60gr of unsalted peanuts
- 270gr of flour
Let's get started with the recipe!
Start by pouring 150gr of brown sugar, 115gr of butter and 1/2 tsp of salt into your mixing bowl.
Mix everything together with a whisk until the butter becomes creamy and mixes well with the sugar.
If your butter comes straight from the fridge, microwave it for 10 seconds to slightly soften it.

This is what your sugar/butter mixture should look like.
Then add 50gr of peanut butter, 1 egg and 1 tsp of baking soda.
Mix again with the whisk until the mixture is smooth and homogeneous.
Any peanut butter will work, but I find the texture is better with a creamy peanut butter, without peanut chunks.

You will get a nice creamy mixture like the first photo below.
Add 60gr of unsalted peanuts and 270gr of flour.

This time, mix the dough with the flat beater (K beater) and not the whisk. Your whisk would get damaged by the cookie dough, which is quite thick and heavy. Mix for about 1 minute — just long enough for the flour and peanuts to blend into the rest.
Grab a perforated baking tray and a perforated mat. You can easily use your regular tray with parchment paper, but baking always turns out much better with perforated trays. :o)

Preheat your oven to 160°C, fan-assisted.
Weigh out portions of 45gr. Roll each one into a nice round ball, then flatten it enough and place it on your perforated mat.

I prepared two trays of cookies, as one recipe gives me approximately 14-16 cookies.
Bake both trays at 160°C for about 14 minutes.

And here is the result!
Watch out — the kids will devour them in record time! :o)
Once cooled, they keep perfectly in a metal tin.
