Pancakes
Hey foodies!
This week, I'm sharing an easy pancake recipe.
Every time I eat these pancakes, they bring back great childhood memories.

For 10-12 pancakes, you will need:
Ingredients:
- 1 egg
- 1 egg yolk
- 70gr brown sugar
- 180gr milk
- 50gr melted butter
- 7gr baking powder
- 160gr flour
- 1 tsp baking soda
- 2gr salt
- 1 tsp vanilla extract
Pancake batter
Start by mixing the eggs (1 whole egg and 1 egg yolk), 70gr brown sugar and 180gr milk.

Mix the ingredients together using a whisk.
Pour 50gr of butter into a small bowl and melt it briefly in the microwave until liquid.

Then add the melted butter and 7gr of baking powder to the mixture.
As you may already know, I always use my precision scale to weigh small quantities (salt, pectin, gelatine or baking powder).

Add 1 tsp of baking soda to the mixture using measuring spoons. This set of measuring spoons includes 1 tablespoon, 1/2 tablespoon, 1 teaspoon and 1/2 teaspoon. So handy!
Add 1 tsp of vanilla extract.

Finally, add 160gr of flour and 2gr of salt.
For sweet recipes, we always add a little salt to enhance the flavour. It gives your pancakes that little something extra.
Mix everything together with a whisk until you get a smooth batter. Make sure there are no small lumps of flour remaining.

Now all that's left is to cook your pancakes!
I used a crêpe maker that I greased with cooking spray so the pancakes don't stick.
If you don't have a crêpe maker, you can also cook them in a frying pan.

The pancakes will start to bubble — let them turn golden on one side, then flip them and let them brown for a few seconds on the other side.
Eat the finished pancakes straight away or keep them warm in the oven at 50°C.

And there you have it, the pancakes are ready! :o)
Pancakes are delicious with maple syrup, Nutella or even apple sauce. Let your imagination run wild.
This time, I decorated mine with red berries, figs and honey.
