Matcha tea-vanilla mochis
Hey foodies!
Fancy an escape to the heart of Japan? These matcha tea ice cream mochis, filled with a creamy vanilla ice cream, are a true journey for the senses. A refreshing bite that will delight fans of Asian flavours! :-)

To make approximately 15 small mochis, you will need:
- 1 pack of matcha tea mochi mix
- 200gr of water
- 300gr of vanilla ice cream
Let's get started with the recipe!
To begin, pour 1 pack of matcha tea mochi mix and 200gr of water into a bowl.
Whisk the mixture until you get a smooth, lump-free batter.
Cover the bowl with cling film. Make sure it is microwave-safe!
Heat for 2 minutes in the microwave at 600Watt, stir, then cook again for 2 minutes.
Stir one last time with a spatula — you will get a thick, elastic dough.
On a sheet of baking paper, spread a generous amount of magic dusting powder. It is essential to use a good quantity, otherwise the dough will stick. :-(
Place the mochi dough on the baking paper and spread a generous amount of magic dusting powder on top again.
Start by flattening the dough with your hands, then use a rolling pin. The dough should be the size of the baking paper (40 x 30 cm).
Slide everything onto a tray and place it in the fridge for 30 minutes.
In the meantime, shape the vanilla ice cream balls that will go inside the mochis. Use measuring spoons to make even, perfectly round ice cream balls. Here, we chose to make mini mochis, so we used the teaspoon.
The size of the ice cream balls will depend on the size you want your mochis to be.
Remember to place your ice cream balls in the freezer as you go so they don't melt.
Then take the mochi dough out of the fridge and cut out 5 cm diameter circles using a round cookie cutter.
Place an ice cream ball in the centre of the circle, fold it closed and shape your mochi. Once it's ready, place it straight into the freezer.
Be quick — the ice cream melts fast! ;-)
Here's the result: matcha-vanilla mochis that pair perfectly with a coffee.
They will keep for approximately 1 month in the freezer in a well-sealed box.
